香滑椰汁糕 (Coconut soft pudding)台湾美眉的Tips for making the coconut pudding:
•Do not reduce the sugar amount in this recipe. The sweetness is
critical for enhancing the coconut flavour in this dessert.
•For richer flavour, water can be substituted by milk, half-and-half, or
evaporated milk.
•I usually add all the liquid together and then heat it up before adding
the gelatine/water mix.
•Shredded coconut is not necessary, but is a great way to hide the
imperfect cuts.
•For big party or pot-luck, you might consider double the recipe. I made
1.5 for our Oct. gathering.
