上周末我们家和几个朋友聚在一起做Chaat派对,Chaat是印度街头小点心的统称,用很多不同的脆饼,土豆,酱料混合配搭而成。
派对上用的土豆还剩下两只,我今天就拿来做了这个马铃薯块,下午就着热热的Masala chai吃,很是不错!
We had a Chaat party over the weekend, our friend Iena helped boiled some potatoes for the Papdi Chaat and left me with two.
Since my husband N has been in the Chaat mood lately, I turned the potatoes into these cutlets, N enjoyed it in the afternoon with a cuppa hot Chai.
材料:
250 克/两只中型 土豆
1/4 杯 冷冻青豆
1/4 杯 切碎的芫荽/香菜
2 只青辣椒
1 大勺 低筋面粉 或 硬麦粉
香料:
1/2 小勺 孜然 Cumin Seed
1/2 小勺 芥菜籽 Mustard seed
1/4 小勺 黄姜粉 Turmeric powder
1/4 小勺 辣椒粉 chilli powder
1/8 小勺 印度五香粉 Garam Masala
盐适量
Ingredients:
250 gm of Potatoes (2 medium size)
1/4 cup Peas
1/4 cup chopped coriander leaves
2 Green chilies
1 tbsp of cake flour (or semolina flour)
Spices:
1/2 tsp Cumin Seed
1/2 tsp Mustard seed
1/4 tsp Turmeric powder
1/4 tsp chilly powder
1/8 tsp Garam Masala
Salt to taste
1. 把香菜和辣椒切碎,青豆洗净入微波炉转1分钟.
2. 马铃薯煮熟去皮,和青豆一起压烂。加入所有香料和芫荽拌匀。
3. 手掌沾湿后取两大勺的马铃薯泥,握成球状后压扁,记得握得紧实一些,不然煎的时候会散开。
4. 把马铃薯块薄薄地沾上低筋面粉/硬麦粉。平底锅加热1/4 杯油,把马铃薯块入锅中火煎至两面金黄即可。
1. Finely chopped coriander leaves and chili, wash peas thoroughly and microwave it for 1 minute.
2. Boil the potatoes until cooked, peel and mash it together with the cooked peas.
3. Add all spices, salt,chili and coriander leaves, mix well. Wet palms, take 2 tbsp of the mashed potatoes and roll it into a ball, lightly press to flatten it. Repeat for remaining potatoes.
4. Lightly coat the cutlets with cake flour/low gluten flour or semolina powder, shallow fry it with little oil till both sides golden brown in color.
吃的时候沾番茄酱或薄荷青酱。
