During these cold rainy autumn days, our favorite thing to do would be a cuppa hot tea and some spicy homemade cookies......
So I made these Chewy Pine Nut oatmeal Raisin Cookie, a special treat for special season--- my favorite fall!
First preheat the oven to 350 degrees(175 Celsius), bake the pine nut for 8 minutes, cold it and grind it coarsely.
In a large mixing bowl, cream together Ghee, heavy cream ,brown sugar, white sugar, Vanilla Extract and egg.
In another mixing bowl, mix together oatmeal, baking soda, cinnamon powder, salt, wholewheat flour, raisin ( I also add in a handful of remaining mixed cereal we have at home.)
Mix together the creamed ingredients and the dry ingredients, and when the ingredients are well mixed, add the pine nut, and mix it well with the other ingredients.
Drop by rounded spoonful on baking sheet (with parchment paper), turn it into the oven (preheat to 350 degrees) and bake for 12 minutes. Cool it on cookie cooling rack, before storing it.
