姜汁年糕是海南风味,以往每逢节日要祭祖时,堂嫂都蒸上一大盘,乡下蒸年糕的盘子直径大约有60厘米.除了拜公的,每次我都能带一大块回城,美美享用几天.现在远离家乡了,只好自己做,好在原料简单,过程也不复杂.
顺便说一句,红糖姜水补中益气、健脾暖胃,而且对女性调经也有帮助哦.
生姜一大块切薄片,加两杯水煮20分钟,把姜片取出,趁热将一杯红糖融化在姜水中,搅化,用滤网把姜汁红糖水倒进盘里.

等到糖水温热时,把糯米粉倒进去搅拌均匀,我只用了3/4袋,做出来的年糕比较软,喜欢吃硬一些的同学可以加一袋粉。冷水入锅,水开后蒸40分钟。

小窍门:年糕晾凉后才能完整地从盘里剥离出来,切年糕不用刀,用细棉线,绕一周,两头交叉一扯,就切下漂亮的一小块了。
