去中国超市买了些新鲜珊瑚虾,回家就马上整吃,把虾洗干净,剪干淨那些腳,用大火煲滚水,把虾焯熟就可以了. 酱汁是生抽,葱, 辣椒和熟油, 虾很好味,一阵就吃完,祗剩头无人吃.

芒果芝士旦糕
做了芝士旦糕,這是我第一次做,味道如何我不知道,因是用來送給朋友的.

製作材料【八吋一個】蛋糕底,消化餅乾削110g我用了(animal crackers),軟化奶油50g,◎混合用湯匙壓入模型中,冷凍1-2小時備用。

糕體
1.奶油起士250g, 2.鮮奶120g, 3.芒果肉150g, 4.糖60g, 5.原味蜂蜜1大匙, 6.香草精1/2小匙, 7.濃縮芒果汁1大匙, 8.動物鮮奶油250g, 9.吉利丁片5片

表面
芒果肉100g, 冷開水100g, 糖2大匙, 吉利丁粉4g┼冷開水20g, 各種水果
◎1.等蛋糕冰鎮4小時後製作。, 2.芒果┼冷開水┼糖打至無顆粒,備用, 3.吉利丁粉┼加冷開水隔水加熱,成透明無顆粒,倒入2.拌勻即可

製作方式
糕體
A.請將吉利丁一片一片泡入冷開水中,至完全柔軟
B.請將1.2.3.4.5放入果汁機打至無顆粒,取出,加入6.7.拌勻
C.請將150g鮮油打至6-7分發
D.將100g鮮奶油加熱至冒煙,放入擠乾水份吉利丁片,完全溶化即可
E.將D與B拌勻,再加入C輕輕拌勻,過一次沙網,倒入模型,冷藏4小時
F.取出蛋糕,倒上表面裝飾,在冷藏2小時,最後擺上水果,刷上果膠,完成!

材料: 2杯日本米(360 ml或大约1.5美国杯子) 1 2/3 C dashi(汤) 1 Tbs mirin (味琳) 1 Tbs糖 1 Tbs酱油 1/2 C mitsuba葉(不知中文叫什么) 一杯竹笋切小塊, 1包烤了的鳗鱼.

把米用冷水洗干淨,大約四,五次然后排泄,直到水是几乎清。 使用滤锅,排泄水。
在铁锅里dashi、糖、mirin和酱油煮到沸腾。
加竹笋,米,让它再沸腾, 盖,盖子。转小火,煮到看不见蒸汽,大约15分钟。
放mitsuba和鳗鱼在飯上面,关火焗10分钟。
把飯和鳗鱼把混合在一起。

dashi食谱: 水,昆布,柴魚片,味曾(miso). 把水和昆布用小火煮大約半小時(不能滾),關火,放柴魚片等15分钟,過滤,再加味曾 (miso)試味.(可以加金針菇,紫菜,豆腐)
