扳面在家乡可说是人人喜爱的面食.. 来印度后好久没有尝到那个味道了.. 原因主要是买不到适合的蔬菜.. 扳面一般要树仔菜, 苋菜, 或菜心煮出来的比较好吃.. 而印度很少有绿叶蔬菜.. 跟印度人的饮食习惯有关..
为什么突然会想要吃扳面呢??
事情是这样的..
好友跟着老公 "移民" Pune, 把家里种着的一盆菜心(马来西亚带来的种子) 全部一并连根拔起.. 送了给我.. 特别喜欢吃菜心的我高兴得不得了.. 只可惜很多还是幼苗... 这样就要被消灭掉了..
扳面一般也有压面机压成的.. 我觉得手拉的比较有韧性, 吃的时候比较有咬劲...

开始煮扳面罗..
先煮高汤.. 最简单的做法..
汤锅里加少少油.. 加入近十只江鱼仔.. 炒香...

加入干净食水..煲...半个小时左右..

然后准备其他材料..
香菇几朵, 木耳丝一把..浸软, 木耳丝用烧水烫一下, 去涩..
精肉一小块, 剁碎..

面粉.. 我用搅拌机和面.. 原因是.. 指甲太长.. 和面很麻烦..

搅拌机内倒入少许的橄榄油..

在一个大盆里撒上面粉..

这个时候准备沾酱..朝天椒几只..切碎.. 越碎越好

锅开始热的时候, 倒入木耳和香菇丝..

炒香加入一点的胡椒粉, 一点盐调味.. 就可以了..

吃到一半.. 盈盈喜欢加入东炎酱.. 这是为什么刚刚盐不加足的原因之一.. 另外一个原因是沾酱也已经带咸味了..
基本上盈盈的弟弟不耐烦一半一半的吃.. 通常都是一碗清汤, 一碗东炎的吃法.. 我吃不了两碗..所以发明了半碗的吃法.. 呵呵..
