弄了一个晚上, 家里网速很慢, 照片一直上不完, 弄到凌晨两点, 还是上不完.. 今天一早到公司, 不到10分钟就搞定了.. 还是宽频好啊!
这次做的 Biryani 很不错.. 今天下午的午餐, 配菜下午再弄了..
先看看材料:
新鲜的羊小排:

薄荷,parsley,辣椒 (这辣椒带甜, 不太辣, 所以我多加了一点),洋葱两只,土豆三只,新鲜黄姜大约两只, 没有新鲜的, 黄姜粉两茶匙也可以. 柠檬或青柠一只.

Basmati 香米, 买的是一公斤, 但是我只用了3/4左右, 两个人吃不了. 腰豆两百克, 葡萄干300 克, 黄色罐子里的是 GHEE, 白色包装的是酸乳酪 (Curd/plain yogurt).

再来看看香料:
买到很好的桂皮, 好大的一片片, 小篮顺时针左上方的是丁香, 右上方的是孜然(Jeera), 右下方的是干豆蔻,左下方的是豆蔻籽.
篮子上边横搁的是藏红花, 好贵的 那么一小盒30块.

先把香米滔好, 浸在水里30分钟, 备用:

热上一杯鲜奶,加入藏红花备用:

把豆荚拿掉,留下里边的黑色种子,备用:

把干豆蔻放到搅拌机的 grinder 里磨成粉末, 记得豆蔻的种子很硬,磨好的粉末最好用筛子筛一下.

把一半的丁香和孜然放到 grinder 里磨成粉, 备用:

把黄姜(切小块),薄荷,parsley,辣椒酱/粉一茶匙,酱蓉一茶匙,蒜蓉两茶匙,盐一小撮,酸乳酪两大匙加到搅拌机里, 磨成酱.

把磨好的酱料倒到洗干净的羊肉上, 加入刚刚磨好的孜然和丁香粉, 还有捣好的豆蔻种子一起和羊肉搅拌均匀, 腌两个小时(鸡肉的话一个小时就够了).

烧上一锅开水, 加入一小撮的盐, 把浸好的香米倒入, 煮至7分熟.(大约7-8分钟左右.)

把米粒到出,沥干, 备用.

趁腌羊肉的空挡把辣椒切段, 洋葱切碎, 土豆切块 (我喜欢带皮的吃, 把土豆刷干净, 切块.) 忘了把土豆块照进来了..

把腰豆放到微波炉烤香, 炒香或烤炉烤也可以, 买现成烤好的也成:

把青柠切半, 榨出青柠汁, 备用:

起锅, 倒入两大匙的GHEE, 烧热, 加入洋葱碎, 炒香:

加入一杯水, 倒入先前磨好的豆蔻粉, 煮40分钟. (因为是羊肉, 所以得煮久一些, 鸡肉15分钟左右就可以了.)

加入食盐调味, 稍微咸一点没有关系, 因为米饭加入后味道就刚好了.
调好味之后,倒入先前煮好的米粒, 呈金字塔型:

准备一个干净毛巾:

把毛巾浸湿, 把湿毛巾盖到锅上:

二十分钟后打开盖子, 把米饭和羊肉等翻均:
