很喜欢吃泰国菜。我和LG最早租的公寓附近有一家很好的泰国菜馆,当年我们经常去吃。可是搬家之后,离得远就不方便去了。恰好那段时间是我疯狂迷恋泰国菜的时期,为了能时常吃到酸酸辣辣还有点甜的泰国菜解馋,我特地买了泰国菜谱,学了几个菜。

绿咖喱鸡由于所需材料和特殊香料相对简单易取,所以是我最常做的泰国菜之一。当然,经过我的简化和山寨,可能已经面目全非了。大家别笑话我呀。

所需食材:鸡胸肉,笋片,茄子(拍照的时候以为一根就够了,后来又加切了一根)
所需主要材料:绿咖喱酱两勺,椰奶粉半碗,鱼露一勺,干柠檬叶10片。
(菜谱上写的是椰浆,可是超市卖的都是听装,吃不完浪费很大,我觉得椰奶粉更适合保存,就用来山寨了。本来还需要九层塔和香茅。经过不断尝试,发现其实柠檬叶的香气是最重要的,而且柠檬叶也好保存。)

做法:笋片过水,茄子过油。

热油锅,先炒香咖喱酱,(这时也可放蒜末和chili一起炒)
再放入鸡肉炒熟,加300毫升水烧开。

椰粉加三勺水调均,加入锅里,同时下笋片和茄子。充分搅均。
等锅再次开的时候,加入柠檬叶,鱼露,1-2大勺糖,转小火焖10分钟。
最后开大火收5分钟至浓稠。(不必全收干)

偶尔做“异国风情”的菜,很兴奋,多拍了几张照。

(上面两张是用了闪光的,貌似更接近实物的颜色。晚上用傻瓜机拍照好像不管怎么拍颜色都有点失真。到底该不该用闪光呢?各位摄影达人给指导一下吧。)
如果有三脚架,可以按照你们家的灯光来设置白平衡,不开闪光灯也拍得好(也可以用镜子反光补光),没有三脚架,还是闪光灯吧
