几个夏天用餐
这几天太热了, 吃得很简单:
冷蔬菜汤 - Gazpacho
4新鲜番茄, plum tomatoes,
2罐头番茄, canned tomato
2黄瓜, cucumber,
1青椒, bell pepper
½ 甜洋葱, sweet onion
3-4蒜, garlic
1/4 C 初榨橄榄油, extra-virgin olive oil
2 TB 葡萄醋, wine vinegar
1 tsp 盐, salt
1/4 tsp 胡椒, black pepper
2 TB 罗勒, basil leaves,
½ tsp 辣椒酱, Tabasco sauce
以上进Vitamix, 打成糊, 进冰箱, 冷藏几小时, 吃时, 撒上 碎的水煮蛋, 罗勒, 油脆面包.
油酥面包: 旧法棍面包, 切小块, 淋初榨橄榄油, 进烤箱烤脆, 撒点海盐,
三文鱼, 撒盐, 胡椒, 用黄油和初榨橄榄油, 煎成外脆里嫩,
Quinoa Tabbouleh, 照合子上做的, 略有改变,
2 cup of water
1 cups quinoa
1/4 cup chopped mint leaves
1/4 cup chopped cilantro leaves
¼ Cup chopped basil leaves
1/2 cup fresh
lemon juice
2 tablespoons extra-virgin olive oil
Salt and black pepper
Chicken ravioli with homemade marinara sauce
Sauce: 橄榄油炒香洋葱和蒜, 下番茄, 炒软, 加罗勒, 牛至, 加盐和胡椒调味, 倒入打汁机打烂, 再倒回锅里, 加入烧熟的意大利饺子.
Spaghetti with Pesto sauce
Pesto sauce: toasted pine nuts, basil, garlic, extra-virgin olive oil, Parm cheese, salt and pepper.

poaching 比较方便, 也好控制火候, 我就在水里加点盐和白酒, 不要让水滚, 慢火烧开,下去就关火焖.
