泰式肉末烧茄子,茴香菜头炒鱼片,茴香鸡蛋炒虾,红烧三文鱼,糯米粽叶鸡翅

再来一些我家的粗菜淡饭家常菜 –


萝卜茵切碎, 用盐杀水, 冲水, 挤干,

锅烧热,下油, 炒肉末,下酱油,酒, 炒干, 加葱姜蒜末, 红辣椒丁, 白果, 笋丁, 素鸡丁, 一点糖, 麻油, 胡椒.

这个是用笋片, 鸡腿菇, 酱豆干, 毛豆, 炒的, 这个没加酱油.

如果想让肉的颜色红点, 炒肉时加酱油, 要炒干后加别的菜, 这样整个菜不是酱色的.

烤虾, 用盐,白胡椒, sake, 腌一下, grill 一下, 很香.

海带芽萝卜蛤蜊汤,

萝卜茵子切下来的白萝卜头就用鸡汤来煮汤, 加了海带芽, 蛤蜊汤, 很鲜, 不浪费.

泰式肉末烧茄子,

热锅冷油, 把碎豬肉炒干,加辣椒末,大蒜末,炒香, 加茄块, 炒软, 加黄豆酱, 甜酱油, 白酱油, 鱼露, 糖, 米酒, 烧入味, 洒白胡椒粉和九重塔, 拌匀, 起锅.

茴香菜头炒鱼片,

鱼片用盐, 糖, 胡椒, 酒, 太白粉, 马味, 滑油, 起锅,

茴香菜头(fennel bulb), 甜洋葱, 蒜头, 黄甜椒炒软, 下鱼片, 酒, 盐, 胡椒, 鸡粉, 拌炒匀, 洒点茴香绿茅, 起锅.

茴香鸡蛋炒虾,

虾用点盐抓一下, 倒入放了油的热锅里, 炒变色, 就倒入(茴香绿茅拌鸡蛋, 盐, 糖, 酒, 胡椒), 蛋炒凝固了就好了.

苦瓜炒豆干黄椒

苦瓜切直条用盐杀青味, 用豆豉辣椒酱, 跟豆干, 黄椒一起炒, 加点糖, 麻油就好了.

酱炒鸡丁,
鸡腿肉切小块, 用盐, 糖, 胡椒, 酒, 太白粉, 马味, 炒断生起锅,
油锅烧热, 加葱段, 姜蒜粒, 辣椒片, 炒香, 下芹菜, 甜椒,胡萝卜片, 炒软, 加入鸡, 加黄豆酱, 甜面酱, 耗油, 酒, 炒入味, 加麻油, 胡椒.

酸白菜排骨粉丝汤,

排骨汆水后, 加水, 酒, 姜片, 炖烂, 加酸白菜, 粉丝, 盐, 胡椒, 葱.

红烧三文鱼,

三文鱼切段, 用Yoshidas 酱, 葱段, 姜片, 酒, 腌20分钟, 用油煎金黄, 倒入腌酱, 烧干,就好了.

开洋包菜,

排骨墨鱼萝卜汤,

糯米粽叶鸡翅

鸡翅, 香菇, 用酱油, 糖, 五香粉, 白胡椒, 绍酒, 腌30分钟
泰香糯米泡过水沥干, 棕叶泡水洗净,

包好后蒸大约40粉钟.

We have a 99 Ranch Chinese market here, they have all kinds of Chinese hard liquor, but if you are not close to one, you can use western hard liquor, I think Vodka is the best since it has no flavor only high alcohol content.

谢谢, 也是排骨川水后跟洗净的小墨鱼干,姜片, 水, 一起慢火炖,等排骨酥软后,大约1小时吧, 就放白萝卜再炖软萝卜就好了.小墨鱼干不用泡也不用先煲,很嫩的,排骨烂了它也就好了.
