泰式牛排和几个其它牛肉晚餐


泰式牛排-

腌料:

6 TB鱼露,
2TB 甜酱油,
2TB 辣酱油,
1个柠檬汁,
2TB 菜油,
1 tsp 辣椒粉( cayenne ),
1tsp 胡椒粉,
3 TB糖,
½ tsp盐,

以下这些香料先切碎再捣烂成泥:

5-6粒蒜,
2 个红葱头,
2根香茅,
5-6 泰柠檬叶,
1个柠檬皮,

3 块NY Strip牛排一切二成 1”厚, 放进Ziploc bag, 跟以上的腌料腌过夜,

第二天取出后用纸巾擦干牛排,

厚平底锅烧很热, 不加油, 把牛排放入, 一面煎3-4分钟, 爱吃medium-rare, 就好了.

蒜油炒饭-

大蒜碾碎进油锅炒金黄, 加泰国香米饭炒香, 加鸡粉, 白胡椒, 盐, 就好了.

配生菜,黄瓜,

牛排酱: 2TB鱼露, 1小勺辣酱油, 1个柠檬汁, 2TB番茄酱, 1个红葱头, 1小勺辣椒粉( sweet smoked paprika )用blender打成酱.

手边有点现成的调味料很方便, 忙的时候就不一定要从头开始, 下面几个晚餐就利用了买的调味品,也很好吃, 看看包装上写的成分, 喜欢里面的香料就用.

烤牛肉串-

另两片NY排就切成小方块, 把肥的边切掉, 不然会很硬, 不象整块牛排可以吃时切掉, 用了两大勺买的调味粉, 加一点橄榄油, 放进袋里,用手捏匀, 进冰箱4个小时, 拿出来, 跟甜红椒, 甜洋葱, 和用盐水煮熟的小土豆串在一起, 用外面的BBQ中火烤10分钟, 每面都烤到.

淋点Ranch 沙拉酱, 儿子问这不是酸奶酱, 不要啰嗦, 不好吃就不要吃, 再不敢问这不是羊肉, 结果吃了四根. 近来他猛长个, 马上要15了, 答应给他做樱的”寿星”蛋糕.

墨西哥式牛排晚餐-

那天赶完一个活很晚啦,就急忙顺路到Costco买了一盘skirt steak,回家就撒上Taco seasoning,进很烫的平底锅, 煎黄两面, 约2-3分钟一面, 就好了,
用同锅不洗下甜椒丝, 甜洋葱丝, 炒软,也撒一点, Taco seasoning, 好了,

薄饼放盘里, 盖上打湿的纸巾,再盖个盘子, 进微薄炉, 热2-3分钟.

忙的时候吃牛排最省事也最快, 又是一个快晚餐-

Costco 买的Rib eye steak, 洒上Costco的牛排dry rub, 进平底锅煎, 两面焦黄, 5-6分中一面就好了, 这个牛排很肥, 我就用东西挡住油, 用了Gastrolux 锅, 无烟,

配个橄榄油炒紫包菜, 意面拌上买的酱, 就是一餐了.


对了, 牛排出锅要歇5 分钟再切, 调料想放什么都行, 就是有盐和胡椒就好了,

锅要很热, 牛肉要表面干燥, 不要水淋淋的, 煎的时候不要动它, 薄的煎的快, 厚的多煎一下, 再厚一点可进烤箱烤一下.

做这样的快餐, 我一般是把锅开中火先烧起来, 准备牛排, 牛排煎的时候切菜, 牛排煎好在醒的时候炒菜. 尽量用不要太花时间洗和切的菜.

这样一顿饭在20分钟就上桌了. 我可以PK Rachael Ray’s 30-minute meals, 让小.蝌蚪去PK Morimoto.

剩的牛排切片可用来做沙拉, 或卷在饼里吃也好, 不怕多做一点.


这不是接连吃的哦, 不然要吃坏身体的.
