鸡冻糕, 糯米酶干菜蒸排骨, 等

鸡冻糕-

小鸡 (Cornish hen) 用开水汆过, 再加水, 葱, 姜, 酒, 盐, 酱油, 味精, 小火焖煮半小时, 冷后把肉拆下来撕碎, 放盘里,

鸡汤接着烧干剩大约两杯, 加洋菜丝进去, 烧化后,通过沥斗倒入鸡盘里, 进冰箱冷却, 吃时可粘自己喜欢的酱.

糯米酶干菜蒸排骨-

糯米泡水, 酶干菜洗净剁碎, 拌酱油, 糖, 油, 鸡精, 垫一半在底上,

排骨用 酒,酱油, 糖, 五香粉, 麻油, 胡椒, 姜末, 蒜末,太白粉, 腌入味, 盖在米上, 再盖上另一半米, 荷叶盖好,上蒸锅, 蒸3小时.

Panna Cotta

这次加了一层菠萝冻, 也是用洋菜做的. 洋菜跟开水煮化后跟一罐碎菠箩拌匀进冰箱冻略硬再倒入Panna Cotta 的浆汁, 再完全冻好.

材料:

炼乳 14 oz 罐头一个
水 2 杯
Vanilla - 1 tsp
Gelatine - 1 TBSP + 2 TBSP cold water
Cream Cheese - 8 TBSP (size of stick of butter)
Salt - 1/8 tsp

做法:

Gelatine - 1 TBP + 2 TBP water - 融解备用

把其他所有的东西放入小锅里加热到锅内边围起小泡,不要烧开,离开火,加gelatine搅匀,到入容器.
