馅料材料:
- 牛肉糜
- 香菇
- 小白菜
- 蚝油
- 香油
- 生抽
- 老抽
- 料酒
- 鸡蛋1个
- 姜
- 葱
- 盐
- 糖
面皮材料:
- 面粉1杯*3
- 上海青叶子3棵
- 南瓜1小块
- 甜菜1小块
做法:
- 将牛肉糜加少许清水顺时针不停搅拌。
- 加入馅料中所有佐料和1颗鸡蛋,不停搅拌成有黏性。
- 将姜和葱切碎拌进馅里。
- 将小白菜和香菇切碎拌入,搅拌均匀成饺子馅备用。
- 分别将上海青叶子,南瓜和甜菜加入少量清水,用榨汁机榨成汁。
- 过滤三种蔬菜汁备用。
- 分别取1杯的面粉和三种蔬菜汁和成软硬合适的光滑面团。

- 盖上保鲜膜室温饧至少半小时。
- 工作台上撒少许手粉,分别将三种颜色的面团搓成长条。
- 再均匀切分成小剂子。

- 深锅入清水煮开后,加入少许盐和食用油在开水里。
- 下适量饺子轻轻翻动。
- 水开后点凉水,盖锅盖煮沸。
- 再点凉水,煮沸,用漏勺捞出。
