卤汁:
酱油 1/4 cup
米酒 1/4 cup
豆瓣酱 1 Tbsp
黄酱 1 Tbsp
糖 1 Tbsp
plum tomato 1
香料:
丁香 4 粒
cinnamon 1/2 tsp
八角 1粒
花椒 1 Tbsp
小茴香 1 tsp
月桂叶 1片
辣椒 1支
black pepper 1.5 tsp
葱
姜
4 条金钱腱
1)5tsp 盐,花椒,葱,姜,2Tbsp 白酒,refrigerator overnight is better.
2)cold water cook to boil; prepare boiled source (可用解冻的老汤)
3)Add meet to boiled source, simmer 40 min in cast iron pot. Then cool down several hours.
4)cook to boiling. Then simmer 10 min.
