栗之糖炒，本家常小食，世人惯食，不以为奇。然制菜之法，千奇百怪，务求至美。

蓝婆糖炒栗子之法取料极简，然食之香甜，令人难忘也。

栗大而圆者，肥美，浸以滚水，三刻后捞出。另取蓝小泉利刀一把，顺栗皮之纹理，重划至内里。十字为佳。

砂糖以温水调和，入栗子，翻滚若干次。 糖炒栗子，最倚火候。炉火烧至220摄氏度，倒入栗子，烤之。一盏茶后，翻之。 待糖色附着，关火煨之。观色入琥珀，则糖炒栗子成矣。
