2014 感恩节家庭晚餐
2013感恩节在泰国过的, 今年也是刚回家不久, 就做了植牙手术, 嘴里一串缝线, 又是止痛药, 又是消炎药的, 本不想烤火鸡过节, 可孩子们都回家过节, 还都带了朋友们来家里, LG说就简单点吧, 烤个火鸡算一荤, 加个沙拉就一素, 再来个淀粉类的, 甜点就买个pie吧.
可是儿子一定会问, “where is the gravy, where is the cranberry sauce, where is the yam???” 女儿以前不是很在意吃的, 有蛋炒饭就高兴了, 现在也会说, 哪里哪里吃了什么好吃的, 一年一次的感恩节就是拼出老命也得上啊. 不过今年还是偷懒不少.

Starters/Appetizers/snacks, 开胃小吃, 零食, 都是买的现成的:
1) Cheese Platter: sausages, pate, smoked salmon, crackers, cheeses, olives, etc.
2) Salad, 沙拉,
Arugula, fresh mozzarella cheese, heirloom cherry tomatoes, 野芝麻菜,小番茄, 鲜奶酪,
酱: white balsamic vinegar(白葡萄醋), 初榨橄榄油,盐,胡椒, Agave。
3) 主菜 – 烤火鸡, Spice brined, herb-roasted turkey
20 LB fresh all nature turkey
Brine solution:
2 cups of sea salt, 2 cups of brown sugar,
Spices: Bay leaves, sage, thyme, black peppercorn, all spice berries,
3-4 gallons of cold water.
Brined for 24 hours in fridge - 火鸡在香料盐水里泡上24小时,
Air dried in fridge for another 24 hours - 盐水里取出火鸡, 里外擦干后, 放烤盘架上, 敞开, 放冰箱, 24小时风干,
在腹腔里塞了苹果, 洋葱, 迷香迭, sage, 芹菜, 欧芹茛, 外面抹上黄油, 从火鸡胸脯用手把皮肉分开, 肉上面也抹上黄油,
烤盆底下还放了洋葱, 大蒜, 迷香迭, 百里香, 芹菜, 胡萝卜, 还有 1罐鸡汤在烤盘里, 这些东西烤完后用来做gravy.
火鸡胸脯朝上, 烤盆放在烤箱最低层, 先在预热450F烤箱烤30分钟, 烤箱改到 350F 烤3-4小时, 中间几次把烤盘里的汁淋在鸡胸脯上, 用温度计在鸡脯最厚部位测有160F就取出, 1小时后再切块装盘上桌吃. 开了烤箱风扇烤的.
刚出炉, 皮还是鼓鼓的,
配菜, Sides:
4) Mashed potatoes, 土豆泥 - 用Costco的做土豆泥的粉:
4杯鸡汤烧开, 加入一包土豆粉, 拌入1杯heavy cream, 1 stick of butter, 盐, 白胡椒粉.
5) Sausage stuffing:
用了Italian sweet sausage, onion, celery, crimini mushrooms, dried cranberries,
先炒香腊肠, 加onion, celery, garlic, salt, pepper, 炒熟, 加sage, thyme, mushroom, cranberry, chicken broth, onion soup mix, 拌入干面包碎里,倒入抹了黄油的烤盘里, 进烤箱350F先盖着烤20分钟, 再开盖烤10分钟.
6) Roasted carrots and parsnips, 烤胡箩卜 拌1/4杯EV橄榄油, ¼ cup maple syrup, cumin seeds, salt, pepper进烤箱425F烤30分钟, 翻翻动, 再烤10分钟.
7) Brussel sprouts with bacon - 培根包兰
培根熬出油, 取出, 留少量油, 放入包兰, 蒜, 鸡汤,盖锅烧至软, 加入盐和胡椒, 盛盘后撒上脆培根,
8) Roasted yam with brown sugar and butter
地瓜, 红糖,黄油, 红薯先用盐水泡洗过, 425F 烤整红薯, 约30分钟, 切开, 放红糖, 黄油, 再烤10分钟烤至金黄.
9) Gravy:
火鸡内脏和脖子熬的汤, 加上烤火鸡盆里留下来的烤过的蔬菜和鸡汤汁, 过沥到一个小汤锅里, 油撇掉, 在炉头上加热浓缩, 加入黄油, 最后用淀粉勾欠.
10) Cranberry sauce, 蔓越莓酱: 1 LB新鲜的蔓越莓,1杯糖, 柠檬和橙子各1个的汁和皮屑, 1支桂皮, 一起煮透后, 加2勺桂花. 进冰箱冷却.
Desserts: Cheesecake,
同事的妈妈的方子, 她说只要她妈做这个甜点, 其他东西就都不用吃了.
很简单的材料和方法, 我把它放这里:
Sam’s Mom’s Cheesecake:
Ingredients: (make sure everything is in room temperature)
12 oz Cream cheese,
2 eggs
¾ cup sugar
2 tsp vanilla
1 sm sour cream (8 oz)
Instructions:
Mix until smooth and pour into graham cracker crust (2 cup of graham cracker with 1 stick of melted butter)
Bake 15-20 minutes at 350F.
Let cool 5 minutes
Topping:
1 c sour cream
3 ½ tbsp. sugar
1 tsp vanilla
Mix thoroughly, spread evenly over cheese cake. Bake in oven for 10 min at 350F
Let it set in refrigerator for 5 hours
儿子吃完就说, This is what Thanksgiving is all about!
