香烤小鸡晚餐 - Roasted spiced Cornish hens dinner


以前做过不同的味道的:

2只小鸡, Cornish hens, 每只剪半, 洗净, 擦干水, 用以下料腌过夜.


非常喜欢这几个香料合成的干调味料, 上次做羊肉串多的,

小茴香, Fennel seeds
芫茜籽, Coriander
孜然籽, cumin
胡椒粒, black peppercorns
干辣椒, hot pepper flakes

把它们用小火慢慢烘烤(toast) 到有点金黄色, 凉后, 打成粉, 加盐, 撒鸡上, 放在架子上, 进冰箱, 敞开, 腌过夜

烤箱预热400F, 烤约40 分钟, 表面金黄, 就好了


皮脆, 肉嫩, 很好吃,

配野米饭,

野米, 糙米各一杯, 用电饭锅 (brown rice挡), 加鸡汤, 煮熟,

初榨橄榄油, 炒香洋葱, 大蒜, 加鸡腿菇炒软, 下酒(1/4 cup Madeira), deglaze 锅, 倒入米饭, 盐和胡椒调味,

非常好吃,


吃洋葱的好处大家都知道, 促进新陈代谢, 排毒, 抗老, 降血压….可是切洋葱让我非常痛苦, 用过各种食品处理机, 可是切出来的质感不是我要的, 清洗又麻繁, 也试过先泡凉水, 或放冰箱, 点蜡烛, 要用非常快的刀, 切时口里含冰块, 还买了一付专用眼镜… 刚又看电视介绍, 买了个切洋葱的合子, 可是要切丝又怎么办呢?

沙拉: 生菜, 西红柿, 泡橄榄, 帕马松奶酪, 核桃,

用了柠檬汁, 橄榄油,拌酱,
