周末伙食 - 烤羊肉串, 手抓饭,


周六: 烤羊肉串晚餐


小羊腿肉, 一大半拿来做羊肉串, 一小半拿来做手抓饭,

做羊肉串选用了不带筋的肉, 切成一寸见方的小块,

先把 孜然籽, 茴香籽, 胡椒粒, 干辣椒碎, 干锅炒香, 磨成粗粉 – 叫它 ”香料粉”吧.

羊肉加入”香料粉”, 蒜, 洋葱, 一点盐, 太白粉, 鸡粉, 油, 腌2小时, 穿成串, 用煤炭炉烤到八成熟, 再洒上买来的西北风味的”烧烤调料”粉, 边烤边吃, 香!

做了素馅的茭麦馅饼, 薄饼和生菜 可用来包羊肉吃的,

素馅的茭麦馅饼:

馅料: 凉薯, 胡萝卜, 卤豆腐泡, 炒鸡蛋, 虾皮, 小蒜苗和小香葱, 太白粉, 盐, 麻油, 白胡椒, 盐, 糖,

皮: 茭麦面, 中筋面粉, 水 = 200克, 400克, 340克, 搅匀后醒2小时包,

不粘锅加油和水, 放饼, 盖锅煎煮到水收干, 开盖两面煎金黄.

果汁: 用了兰梅, 西瓜, 木瓜, 香蕉, 胡萝卜汁打的.

周日, 用另一半略带筋的羊肉做了手抓饭

羊肉也是用”香料粉” , 蒜, 洋葱, 一点盐, 太白粉, 鸡粉, 油, 腌过夜,

短米用水泡3小时, 米和水用电饭锅的定量来量, (三杯米, 到三格水).

羊肉用油炒断生, 加”烧烤调料”粉炒香, 加洋葱丝, 炒软, 盖盖略焖煮一下,

加米, 水, 胡萝卜丝, 盐, 小火再焖煮到水收干, 加入青豆和葡萄干, 再关火焖10分种, (因为我用的锅可保温, 一般的锅就开点小火焖).


拌匀, 开吃. 非常成功,非常好吃,
