简单的年夜饭 –

过中国年还是来私房后感受到的气氛, 今年人又更少, 就做几个菜意思一下, 说是要全鱼, 全鸡, 全…, 还要有圆子代表团团圆圆, 咱来几个代表吧.

白斩鸡:

材料: 龙岗鸡4LB, 进入加有姜块和葱段的开水煮15分钟, 关火焖10分钟, 取出, 盖保鲜膜, 冷后切块装盘,

沾酱: 葱, 姜, 盐, 味精, 热油.

清蒸龙利鱼:

材料: 龙利鱼 (rex sole) 2.5LB, 盘底垫葱段, 放上鱼, 再放姜片, 开水上笼, 中火蒸 10分钟, 关火, 焖 5分钟, 取出, 倒掉盘里水, 洒葱丝, 红辣椒丝, 浇热油, 淋蒸鱼露.

烩什锦:

材料: 香菇, 黑木耳, 金针菜, 白萝卜, 胡萝卜, 鹌鹑蛋, 小玉米, 冬笋, 油面筋, 腐竹结, 红枣, 青江菜梗, 鱼饼,

调味料: 油, 糖, 酱油, 绍酒, 白胡椒, 素耗油, 麻油.

三色彩球:

材料: 肉丸, 鱼丸, 胡萝卜丸, 芥兰,

调味料: 油, 鸡汤, 糖, 酱油, 素耗油, 太白粉, 香油.

汤:

材料: 小鸡, 猪脚, 墨鱼干, 姜块,

开水川烫小鸡, 猪脚, 加冷水烧开, 慢火炖5小时.

调味: 盐, 绍酒,

饭后喝汤, 忘了拍成品图了.

Candela 回复 悄悄话 蛋饺的样子太可怕了。火太大了。个头也太大了。我用不锈钢汤勺做蛋饺,比锅轻,大小正好。
