姜蒜炒虾,糖醋排骨,糟溜鱼片,回锅肉,榄角蒸石班,丝瓜鱼羹汤,芝麻煎虾,甜酒糟

家常菜 -

上几个中菜晚饭, 做中菜战场一般都是轰轰烈烈的, 也是速战速决的, 很难拍过程照, 好在这些菜大家也都熟悉的,我就简单的介绍一下吧.


姜蒜炒虾,

虾用牙签从背上挑掉沙肠后, 冲净, 用点米酒和盐腌一下,再用开水汆过,
炒锅放入黄油炒香姜祘末, 倒入虾炒几下, 加入米酒, Yoshida酱, 炒几下酱收干就好了.

糖醋排骨 – (不炸的, 用糖色炒的)

用油把糖炒成褐色,就下排骨慢火煸炒出油, 金黄色,就加绍酒, 黄冰糖, 酱油, 姜片, 葱白段, 再炒干, 加一点水和香醋, 焖一下就好了, 勾欠.

药膳汽锅鸡 – 又做了一次鸡汤来补补, 周围很多人在感冒.

糟溜鱼片,

鱼片用盐,米酒,白胡椒, 蛋白,淀粉马20分钟,用少量的温油轻滑变白色, 取出,

油锅炒香葱段, 姜片炒香后,取出葱姜不要, 加黑木耳,一点胡萝卜配色,米酒,高汤, 盐, 焖煮一下, 倒入自做的甜酒糟, 鱼片炒匀, 勾欠, 起锅.

回锅肉

用了三种辣椒, 都不是太辣, 用了洋蒜苗,

五花肉用冷水煮到8-9分熟, 取出, 放凉切薄片, 冰箱冷却后更好切,

炒锅加一点油炒肉片,炒到透明, 发卷, 我的还切得不够薄, 当时还是很烫手,
加姜片, 蒜头, 甜面酱, 辣豆瓣酱, 豆豉, 炒香, 加辣椒炒软, 加蒜苗,喷点酒, 一点鸡汤,炒匀,

蒜炒油菜,

豆豉炒芹菜豆干,

油锅炒香豆干丝, 豆豉, 下芹菜, 炒软, 加点酱油膏, 拌炒匀, 加一点麻油.

榄角蒸石班, 好大一条鱼, 多亏了那个长蒸锅.

这次蒸了10分钟, 关火后焖了5分钟. 榄角用得很好, 多谢哪位老师的指点.

丝瓜鱼羹汤,

鸡汤烧开加姜片, 鱿鱼羹, 烧滚, 加丝瓜, 番茄烧滚, 加点米酒, 白胡椒, 很简单很好喝的汤, 洒点葱花, 麻油. 这里的姜和番茄用得很好.

洋葱牛肉,

芝麻煎虾,

虾背切开, 撒点盐和米酒, 腌10分钟, 擦干水,

碗里放点面粉, 芝麻, 和海苔香松 (rice seasoning), 把虾的肉面沾上这个混合调料, 压压实, 掸掉多余的, 进加有橄榄油的热锅里, 中火煎2-3分钟, 金黄, 就好了.

清炒大豆苗,

自做的甜酒糟 -

我是用电饭锅煮糯米饭, 6杯米, 两粒酒药, 用 ”sweet rice”挡, 等饭不烫手后,加入冷水化开的酒药粉, 拌匀, 放进焖烧锅的内锅, 略压平表面, 留个洞, 酒药杯用水荡干净留在杯里的药粉, 倒在饭上面, 外锅内用热水荡一下,倒掉水, 放入内锅, 盖好, 两天就好了. 装在瓶里放进冰箱慢慢用,一瓶一瓶用, 用干净勺挖.

瓶子,瓶盖, 和内锅, 用高度的米酒擦干净, 防有油污.

湖说 回复 悄悄话 请问焖烧锅要接电吗?如果接电,多少温度?还是就是保暖就行不用接电?
