这几天的晚饭 - “熏”鱼, 怪味牛肉, 交作业等

我的脚受伤了, 这几天就不能去锻炼, 也不能出门, 加上外面还在刮风下雨, 就忙厨房和私房了.


想做小蝌蚪的清蒸红鳟鱼, 买了长蒸锅, 也买来costco 的trout, 觉得还是不够做清蒸鱼的质量, 想当年在西雅图时, 带孩子们去U-fish的养鱼场, 一下功夫就钓了好多, 孩子们开心得不肯走, 钓上的鱼又不能放回去, 每条鱼量寸买, 那怀孕的鳟鱼还真是像彩虹一样美得不行, 听说也是最美味好吃的时候, 不让钓, 我们只能看看而已. 那时, 常变着法做鳟鱼, 今天来做个冒牌熏鱼, 很好吃.

鱼用盐, 胡椒, 酱油(老抽上色), 绍酒, 五香粉, 葱, 姜, 香菜, 腌3-4个小时, 中间翻个面,

擦干, 放烤盘里, 用160F低温度烤3个小时,

用腌鱼的料, 再加酱油, 糖, 醋, 五香粉, 番茄酱一起烧浓稠, 沥去渣滓, 加点麻油, 刷在烤好的鱼上, 吃时还可沾酱吃, 或就用”工研乌醋” 类似上海的辣酱油沾着吃, 也很棒.

怪味牛肉 –

叫它怪味还真是不离谱, 用了花椒, 干辣椒, 小茴香, 孜然籽, 八角, 炒香后磨成粉,

陈皮泡软切小片, 姜蒜切片, 红萝卜, 芹菜切片,

调味汁: 酱油, 绍酒, 香醋, 糖, 麻油, 淀粉, 味精, 白胡椒粉,

牛肉(skirt steak) 逆纹切片, 用酱油, 绍酒, 白胡椒粉, 蛋清, 小苏打粉(baking soda), 淀粉腌几小时, 油锅里炒断生, 取出备用.

油锅炒香陈皮, 姜蒜, 加红萝卜, 芹菜炒软, 牛肉回锅, 加入香料粉, 炒匀, 倒入调味汁拌炒匀, 拌入香菜.

吃时再撒点香料粉上去, 麻辣香, 甜酸辛, 好吃.

鸡片炒双色雪豆 - 第一次看到紫色雪豆, 买来试试, 有点像紫包菜一样也是比绿色的硬点.

腊肉炒蒜苗-

买的腊肉在饭上蒸熟, 切片跟辣椒, 甜椒, 蒜片, 和洋蒜苗炒, 酱油膏调味.
