2009 感恩节晚餐 –
我还是做的比较传统的感恩节吃的, 跟去年差不多, 有点小变化而已.

饭前小吃:
橄榄酱涂脆面包:
Tapenade –橄榄酱
我来大约给个量:
1 cup green and black olives, seeded and crushed, kalamata olives
2-3 cloves of garlic
2 TB caper
1/4 cup chopped parsley
1/2 cup sun dried tomatoes packed in olive oil
2TB Dijon mustard
1/4 cup E.V. Olive oil
1/4 cup Parmesan cheese
1/4 cup pine nuts
2 TB lemon juice
2 - 3 fillets of anchovies
some red pepper flakes (if you like it hot)
全部材料进 blender 打成泥, 就成了
面包是用的baguette, 切片, 烤脆, 客人自己涂来吃.
这次做的客人来了没来得及拍照片, 贴张我上次做的吧, 是用food processor 打的, 比较粗点, 很好吃,
酥脆条 –
用了Puff pastry and egg wash, 再洒点调味料, 400F烤了10分钟.
甜的(sugar and cinnamon) 和咸的(veggie seasoning) 两个味道:
主角来啦:
烤火鸡 – 这次又是相当的成功, 给自己拍拍肩膀, 呵呵..
多放几个图, 得意一下, 皮脆, 肉嫩, LG说为什么一年只吃一次火鸡,
我这次买的是21 LB火鸡, 用2杯盐炒香八角和花椒, 对水, 泡了12个小时,今年火鸡太大, 最大的容器都不行, 就用了个cooler, 加冰, 用了专门brine bag, 外再加一个一般的塑料袋子, 取出擦干后, 在腹腔里塞了 洋葱, 柠檬, 桔子, 迷香迭, sage, 用绳子绑好腿, 外面抹上黄油, 盐,胡椒, 烤盆底下还放了洋葱, 柠檬, 桔子, 迷香迭, sage , 还有鸡杂, 这些东西烤完后用来做gravy很棒.
先在400F烤箱烤背面一小时, 再在325F 烤胸面3小时, 用温度计恻厚部位有160F就取出, 30分钟后再切块上桌吃.
蜜汁烤火腿 – Costco 买的, 外面抹上蜂蜜糖浆, 来烤的,
Gravy -
烤盆里留下来的烤过的蔬菜, 鸡杂, 和汤汁在炉头上加热, 加鸡汤, 白酒, 再烧滚,
另一个sauce锅里加黄油, 炒熟面粉, 把烤盘里的汤汁过沥倒入, 搅匀成糊, 加一点鲜奶油(heavy cream), 就是好吃的gravy了.
Stuffing-
用了Italian sweet sausage, onion, celery, carrots, toasted white bread cubes, chicken stock, butter. 我是不放在火鸡里面烤的.
先炒香腊肠, 加onion, celery, carrots , sage, thyme, 炒软, 加cranberry, almonds,
鸡汤拌入面包, 冰箱过夜, 第二天淋上蛋液和牛奶, 进烤箱375F先盖着烤30分钟, 再开盖烤,10分钟.
小红莓酱 - Cranberry compote:
Fresh cranberry, cranberry jelly, mandarin orange, mint leaves, lime and lemon zest, and honey,
土豆泥- Mashed potatoes:
Potatoes, sour cream, butter, black pepper, salt and parsley:
烤奶油瓜和胡萝卜 - Roasted butternut squash and carrots:
橄榄油和调味料拌匀后进400F烤箱烤30分钟. 洒欧芹碎.
烤红薯- Roasted yam with marshmallow topping:
红薯先盐水泡过, 375F 烤整红薯, 约1.5 小时, 去皮,切段, 放涂过黄油的烤盘里, 淋枫糖浆, 和放黄油, 再350F烤15分钟,让黄油溶化, 再铺一层 棉花糖 marshmallow and 烤至金黄, 约4-5分钟.
蔬菜- 培根炒 芦笋,磨菇,小番茄,
黄油,橄榄油炒芦笋, 磨菇,小番茄, 加炒干的培根, 拌匀.
扁豆汤- Lentil soup
咸肉炒出油,捞出渣, 炒洋葱, 西芹, 胡萝卜, thyme, bay leaves, 罐头番茄, 鸡汤, 扁豆, 慢火炖烂, 盐和胡椒调味. 洒欧芹.
南瓜蛋糕- spiced pumpkin bundt cake (from Foodnetwork, modified)
Ingredients:
1 cup cranberry
1 cup slivered almonds
2 1/2 cups AP flour
1 tablespoon baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ground nutmeg
3/4 teaspoon ginger
3/4 teaspoon allspice
1/2 teaspoon salt
1 cup brown sugar
2 eggs
2/3 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla
1 can (14-oz size) unsweetened pumpkin puree (not pumpkin pie filling)
powdered sugar for dusting
Directions:
Preheat oven to 350F . Lightly butter or spray with oil a bundt pan that will hold at least 9 cups.
In a large bowl, place flour, baking powder and soda, spices and salt. Add brown sugar. Using a fork, stir until evenly mixed. Set aside.
In a medium-size bowl, whisk eggs with milk, oil and vanilla. Whisk in pumpkin just until smooth. Scrape into flour mixture, then stir just until mixed. Stir in cranberry and almonds until evenly distributed. Turn into prepared pan and smooth top.
Bake in center of 350F oven until a cake tester inserted in center of cake comes out clean, 55 to 60 minutes. Let stand 10 minutes. Run a knife around outer pan edges to loosen cake. Turn out onto a wire rack set over a baking sheet. Cool. Dust with powdered sugar.
