炖牛肉晚餐 - Beef pot roast dinner


跟儿子一起去Costco买菜, 问他想吃什么, “beef, but not steak, something hearty”,



材料:

牛肉, beef chuck, 4+ LB ,
面粉1/3杯,
橄榄油,
洋葱1个切碎,
芹菜, 2条, 切碎,
胡萝卜3根,刨皮, 切碎,
红酒2 杯,
鸡汤,3杯,
百里香,1小拺, Thyme,
红皮土豆 6个,切块,
盐, 黑胡椒,
巴西利, Parsley 切碎,

补加了一勺Worcestershire sauce 和一勺ketchup


2TB黄油, 2TB面粉 - 拌匀,用来勾欠.



做法:

- 整块牛肉粘上面粉, 掸掉多余的,

- 加热可进烤箱的重铁锅 , 倒入橄榄油, 烧热, 放入牛肉, 两面煎金黄, 取出,

- 放洋葱, 芹菜, 胡萝卜, 炒软, 加百里香, 炒香,

- 加酒, 鸡汤, 把锅底的焦渣刮松, 大火烧滚, 让酒精挥发, 加牛肉, 加盐, 黑胡椒, 盖盖,

- 进300F烤箱底层烤2小时, 加入土豆, 盖盖, 改350F 再炖烤一小时, 到肉烂.

- 烤箱取出, 取出Thyme, 撇掉浮油, 把肉和菜盛在盘里,

- 锅里的汤汁,尝一下, 加了一勺Worcestershire sauce 和一勺ketchup, 大火收浓, 改小火, 拌入黄油混好的面粉, whisk, 打匀, 浓稠后倒在菜上,

- 洒上欧芹碎, parsley, 盖在土豆泥上吃.

甜点 - 轻乳酪蛋糕

今天又做了一次, 这此用了cottage cheese, 做法也改了一点, 很好吃,


材料:

A:
乳酪, cream cheese, 250g
cottage cheese, 300g
50 g cake flour, 低筋粉,
8 egg yolks, 蛋黄,
4 TB melted butter, 溶化的黄油,

B: whisk until soft peak, 1跟2 一起打, 略起泡, 慢慢加入3, 边加 边 打, 打到中性发泡,

1 - 8 egg white, 蛋白,
2 - 1 tsp cream of tartar, 塔塔粉
3 - 1 cup sugar, 糖

9”X 3” 圆烤盘 , 脱底的, 喷油, 底和周围都贴上烤纸, 外面再包上铝纸,

烤箱预热340F, A材料全部用 food processor 打匀, 倒入一大盘, 加入少量打发的蛋白, 拌匀, 再加入其它蛋白, 轻轻拌匀, 倒入烤盘, 放在有水的烤盘上, 水不要太多, 烤2小时, 表面变黄后, 盖上铝纸, 继续烤, 用竹签插入取出, 光滑就好了.

烤箱取出后, 放架上冷却, 15分钟, 看边上开始松开, 就取出烤盆, 冰箱冷却后就开吃,

非常好吃, light and fluffy, yet rich and creamy.

回复 悄悄话 姐姐,我一没事儿就来看你的blog,生活气息,家庭氛围,你轻松煮菜的风格都是我的最爱~~ 这道菜我一直很想试试看,一直怕卡路里太高了不敢做。。。。我啥时候能有机会尝尝姐姐的手艺呀~
Bali 回复 悄悄话 suezi-q,你这个菜谱我朋友做了请我吃,不错哦.我做beef stew一般只用红酒炖,不加芹菜不用parsley,但是用洋葱大蒜百里香胡萝卜蘑菇,你试试,也很好吃呢,是法式的.

煎黄的肉会很香,就象做中菜也要用油爆炒香才好吃.这个蛋糕是乳酪和戚风的结合,很轻又有奶香味.

Worcestershire sauce西人店有卖,用淡酱油也行,上海的辣酱油最好,你试试这样炖一次,不要用太瘦的肉.
Bali 回复 悄悄话 这个牛肉料看上去是正宗的Irish Stew,可是为什么要先烤了牛肉呢? 象爱尔兰Stew一样直接煮不是更方便?
这cheese蛋糕用cottage cheese注意不错哦,比较健康. 看上去有点象sponge cake,是用了面粉的原因吧? 吃起来是不是象sponge cake呢?

还有,我做的牛肉总是很干很柴,不知道为什么?害得我现在只吃超市卖的Tyson's Beef Tips,微波炉一热很嫩很软,味道好极了,就是不会做。我先试试你的方子。非常感谢!
