一包鸡肉,一包鱼肉,一包排骨

一包鸡肉,一包鱼肉,一包排骨

这个鸡里脊肉我很爱用, 一包做了以下三个菜:

用盐水泡一下, 肉质更实一点.


泰式黄咖哩鸡-

2 LB鸡脯里脊肉, 用盐冷水泡半小时, 沥干, 擦干水份, 切片,
1/3 cup 黄咖哩酱,
椰奶一罐(2 cup),
椰糖2大勺,
鱼露3大勺,
胡萝卜1 LB切块,
土豆, 1.5 LB切块
1个甜洋葱切片,
蒜,5-6粒,切碎,
红辣椒,3-4个,切小粒,
泰柠檬叶-5-6片, (kaffir lime leaves),切丝,
泰柠檬皮, (kaffir lime zest)

油锅炒香洋葱和大蒜, 加咖哩酱炒香, 放椰奶, 烧滚, 加所有的料, 拌匀, 加一点水焖煮30分钟, 就好了.

用这个综合的菌菇泡水后来炒它, 加了一点芦笋, 用了蒜片.

用来炒芦笋, 胡萝卜, 马蹄片, 用了一点XO酱,

一包龙利鱼用了三片做酸菜鱼, 2片做皮蛋滑鱼粥,

酸菜鱼- 大家都会做, 我就分享一下切鱼的方法吧, 鱼排先切横大段, 再竖切片, 这样不易散开破裂,

鱼片要擦干水, 用盐, 白胡椒, 米酒, 淀粉马味, 不要太湿, 也不要太多的粉, 才会裹的紧, 肉才会很滑嫩,

皮蛋鱼粥, 加了鱼丸,

Costco 的一包三条小排骨是这样干掉的:

烤排骨-

排骨用了Trader Joe’s 的酱腌过夜, 用锡纸包好进 325F烤箱烤两小时, 打开锡纸, 铺上一层 加工过的莎莎酱, 烤箱加温到350F, 再烤30分钟, 就好了.

加工过的莎莎酱 - 用油炒香红葱头和大蒜末, 倒入 Costco 的新鲜salsa (salsa is made of onion, garlic, tomato, jalapeño, cilantro, lime juice, salt and pepper), 炒到软, 加入红糖, 腌排骨的酱, 略收干汁, 就是了.

金桔烧排骨,

树上金桔好多, 棌来, 压破一下, 加糖, 进冰箱几天, 金桔成透明状,就是糖腌金桔了,

把糖腌金桔放锅里, 放进川过水的排骨, 倒入Yoshida sauce (it has soy sauce, Mirin, ginger, garlic, sugar, sesame oil, etc), 一点米酒, 水, 小火炖1小时就烂了, 中间翻动一下.

排骨烧豆油泡-

排骨切断, 川水, 用油爆香, 加姜片,葱白段, 拍过的蒜头, 再爆炒几下, 加老卤汁, 冰糖, 绍酒, 水, 小火煮30分钟, 加入用热水洗过的豆油泡, 再煮到肉烂, 豆油泡软了, 就好了.

就这样消灭了.
