上两道泰味西做 - Roasted Rack of Pork & Chicken Rice Casserole



烤猪大排 - Roasted rack of pork with Massaman curry paste

腌汁:

4 TB泰咖哩酱, Massaman curry paste
1/4 杯, Kraft BBQ酱,
4 TB 糖,
½ 杯 米酒,
4 TB 酱油,
1 杯水,


配菜, 红皮土豆, Brussels sprouts 用Olive oil, Garlic, Rosemary, Lemon zest, Salt and pepper 拌过, 倒在烤盘底,


把腌泡过24 小时的猪大排取出擦干, 抹橄榄油, 撒上Paprika pepper, 放烤架上, 进350F烤箱烤, 1.5小时, 肉内温度达150F, 就取出, 醒10分钟,就好了.

烤过的蒜,碾烂跟蜂蜜芥末酱调匀做酱, 也用了一点来拌配菜,

泰红咖哩鸡煲饭- Thai Red Curry Chicken Rice Casserole

材料:

去皮去骨的鸡腿肉 2 LB多, 用盐,米酒, 胡椒腌一下, 再用纸巾擦干.
红椒2个,切片,
红葱头, 2个,切碎,
蒜, 切末,
泰红咖哩酱, 3TB
椰奶一罐,
鸡汤1/2 罐,
冻缸豆, 用了 Trader Joe’s frozen French Bean, 方便好用.
泰香米, 2杯,
盐, 糖, 各1 tsp, 可免.

柠檬, 香菜, 泡辣椒(用鱼露和醋泡的), 吃时加的.

做法:

-烧热锅, 里面放橄榄油, 把鸡块放入, 两面煎成金黄,取出, 我分了两次煎的,

-同一锅里加入红葱, 大蒜, 炒软, 加泰红咖哩酱炒香, 加米, 炒透明,

-加鸡汤, 椰奶, 糖, 盐, 鸡, 盖盖,小火焖 15分钟,

-加缸豆, 红椒, 盖盖再焖7分种, 好了.

洒香菜, 柠檬汁, 加泡辣椒, 吃吧, 好吃但不上照滴.

可能不爱西餐的朋友们会喜欢的.



借这贴跟大家分享一点小体会,

我看到很多JM们会失败,

做蛋糕时打蛋白, 做豆花, 做甜酒酿, 腌泡菜…等等, 都很忌讳油腻, 我的建议是不要用塑料器皿, 或木头的, 因为就是洗得再干净总会留点在毛孔里, 最好是用不锈钢或玻璃的. 洗净后擦干再用.
