再上西班牙菜饭 – Paella

Paella 跟我们的中式炒饭一样变化很多, 基本方法了解了, 看手头有的材料, 就把它们配在一起, 家人吃得高兴,我就算大功告成啦. 我喜欢它最主要是能一锅搞定的晚餐. 营养价值也挺高的.

这次用的材料:
- 2 TB Olive oil
- 1 LB虾 , 用盐抓捏后, 洗净, 擦干, 撒上胡椒, 盐, cayenne pepper, smoked paprika
- 鸡翅,用盐,胡椒, cayenne pepper, smoked paprika 腌入味,
- 腊肠, (最好是用 Chorizo sausage, 我用了意大利辣味的)
- 洋葱, 甜椒, 切碎 (我喜欢多放一点蔬菜)
- 蒜末,
- 番茄切碎,
- ½ tsp saffron threads,
- 2 cup sushi rice,
- 鸡汤 2 罐
- 1 cup Marsala wine
- 盐,胡椒,
- 冻豌豆
- fresh thyme, oregano

一般是用比较矮的宽口大锅, 我用了All-clad 6-quart French braiser, 不锈钢的, 因为我要它的锅焦渣, 有个名厨爱讲这句话: ” caramelization equals flavor”.

烧热锅, 里面放橄榄油, 把鸡块放入, 两面煎成金黄,取出, 再放入腊肠,也炒成金黄取出, 同样把虾也两面煎过取出.

同一锅里加入洋葱, 甜椒, 大蒜, 炒软, 加米, 炒香,

加酒, 把锅底刮一下, 加番茄, 鸡汤, saffron, thyme, oregano, 鸡块 , 腊肠, 盐, 胡椒, 烧开, 盖盖, 小火焖15分钟

开盖, 加豌豆, 虾, 拌匀, 再盖盖, 焖7-8分钟, 关火. 吃时挤上柠檬.

刚刚回家, 老朋友从湾区来玩Disney 和 Sea World, 临时请他们吃了个便饭, 赶紧去Costco买菜, 就又做了一次Paella, 就贴一下图吧, 基本上是大同小异, 因为量多, 东西都分开炒, 最后还进烤箱烤了一下, 做了 6杯米, 用了Calphalon 8.5 QT Dutch oven.

虾壳用油炒过, 跟罐头鸡汤熬煮一下, 过沥掉虾壳, 滚开时, 再倒入米里, 加入藏红花,

除了豌豆和虾外, 倒入所有的料, 拌匀, 加盐和黑胡椒调味, 进350F烤箱, 烤30分钟.

再加豌豆和煎过的虾, 拌匀, 就好了.

Costco买的青口, 一包就是5 LB, 多下来的用蒜和白酒烹炒一下又是一道菜.

想换个发型, 跟师傅说帮我剪个Martha Stewart 的样吧, 他说Martha Stewart 是谁呀, “就是那个美国一号女强人哪”, “哦, Hillary Clinton”, ”嗯” (我当时是想, 可不是吗), 可我并不是要那个发型的. 看吧, 成这样了,
