无花果干和绿橄榄烧鸡- Chicken braised with dried fig and green olives

材料:

带皮带骨的鸡脯肉4片
培根6条, 切小段,
洋葱一个切碎,
胡萝卜两个刨皮切大丁,
无花果干14颗, 一切二,
泡绿橄榄, 半瓶, 略拍扁, 泡汁留用,
thyme, 一小扎,
Bay leaves, 4-5片,
鸡汤一罐,
橄榄油,
盐, 黑胡椒,

巴西里,切碎,
柠檬一个, 吃时挤汁用.

锅烧热加一点油, 放培根炒脆取出, 锅留油,

鸡脯肉, 去掉油脂和边上多余的皮, 擦干, 撒盐和胡椒腌一会儿, 拍上一点面粉, 进热油锅里两面煎金黄, 取出, 把油也倒出不要,

同锅里加橄榄油, 烧热, 加洋葱炒香, 加胡萝卜, 无花果干, 绿橄榄, 炒热, 倒入鸡汤, 泡橄榄汁, bay leaves, thyme, 烧滚, 把鸡脯肉埋放进来, 盖盖中小火焖烧20分钟, 开盖大火略收汁, 撒巴西里, 培根, 挤柠檬汁, 上桌.

配主食是: Orzo risotto

意米面, 1LB 用开水煮熟, 沥干水,备用.

锅烧热放培根炒脆取出油不要, 加洋葱炒软, 加面,拌炒, 加少量鸡汤和黄油, 加气司粉拌匀,好了.
