2008 感恩节晚餐

感恩节晚餐-

今年在我家过, 我爸妈回国还没回来, 住得近的堂弟, 表妹和他们的父母们都来了.

因为我爸不在, 没人帮我打下手, 我头一天就没上班了, 整整忙了两天.

为了少洗碗, 我都用了能上炉子, 又能进烤箱, 又能上桌的锅和盆, 到时还能保温, 很方便.

中午厨房都摊开了, 没法再做热的午饭, 就先上了一些小吃的:

晚上又接着再来一次饭前零食: (Costco买的东西总是很多)

这个方子很好吃,也很好做,

我烤的火鸡也非常成功, 时间和火候很恰当,

我买的是18LB火鸡, 用4 GL 水, 2杯盐, 1杯红糖, 泡了12个小时, 取出擦干后, 敞开在冰箱里过了一夜, 在腹腔里塞了 柠檬, 迷香迭, sage, 用绳子绑好腿, 外面抹上黄油, 烤盆底下还放了洋葱, 胡萝卜和芹菜, 还有鸡杂, 这些东西烤完后用来做gravy很棒.

先在400F烤箱烤背面一小时, 再在325F 烤胸面2小时, 用温度计恻厚部位有160F就取出, 30分钟后再切块上桌吃.

肉很入味, 很嫩, 大家都说是他们吃到最好吃的.

切了一盆,

烤盆里留下来的烤过的蔬菜, 鸡杂, 和汤汁倒入sauce锅里加鸡汤, 白酒, 再烧滚, 过沥,去油,留用, 同锅里加黄油, 炒熟面粉, 把过沥的汤汁倒入, 搅匀成糊, 加一点奶油(heavy cream), 就是好吃的gravy了.

我的stuffing 也是很好吃,

用了Italian sweet sausage, onion, celery, carrots, toasted white bread cubes, chicken stock, butter. 不干不湿正好, 我是不放在火鸡里面烤的.

先炒香腊肠, 加onion, celery, carrots , parsley, 炒软, 加黄油,鸡汤, 烧热, 拌入面包, 冰箱过夜, 第二天进烤箱350F先盖着烤30分钟, 再开盖烤,10分钟.

很好吃的烤甜薯, 甜薯5LB, 用红糖1杯, 黄油1条, 盐1tsp, black pepper 1/2tsp, 水1/2杯, 在炉上炒拌匀, 进350F烤箱烤40分钟, 撒上 (2 杯pecan nuts + ½ 杯红糖+1个打散的蛋白, pinch of cumin powder+ pinch of cayenne pepper+1/8 tsp salt), 烤15分钟, 上面焦香就好了.

我的Orange flavored flan 也是很受喜爱, 用了heavy cream, whole eggs and yolks, fresh squeezed orange juice, poured into a home made caramel sauce coated dish, baked in 325F water bath oven for 1.5 hours. Chilled for 6 hours before serving.

split pea soup – 很好吃.

with bacon, and Virginia country ham, 干的豌豆, 土豆, 洋葱, 西芹, parsley, bay leaves, heavy cream, 本来要打成糊, LG反对, 他说不爱吃baby food.

Brussels sprouts and carrots-

炒香的火腿, 培根, 加一罐鸡汤, 4TB Extra Virgin olive oil, 盖盖煮15minuts.

Mashed potatoes-

Boiled peeled potatoes, mashed with butter, milk, heavy cream, salt and pepper.

cranberry sauce-儿子好爱

1 bag of cranberry, 1cup sugar, ¾ cup fresh orange juice, ¼ tsp salt, 2TB triple sec 煮烂.

I used shredded coconut from Baker's brand. It's kind of moist, not flaky dry, not fresh either.
