牛尾苡米粥- Oxtail Barley Stew

这道菜是我歪打正着的, 本来是要做牛尾罗宋汤, 突然改变了计划, 把它变成粥吃, 一下就把晚饭解决了. 做了一大锅, 吃得很舒服.

材料:

牛尾, 一条, 约3LB

洋葱1个切碎,
胡萝卜3根,刨皮, 切小块,
土豆3个,刨皮, 切块,
罐头番茄 1罐
包菜,半个,切片,
番茄酱 1/2小罐,
Bay leaves, 几片,
蒜, 5-6粒, 拍碎,
鸡汤, 最后是用了三罐,
红酒1/2 瓶,

面粉1/2 杯,

盐, 黑胡椒,

苡米, 1LB, 泡水一小时,

做法:

- 牛尾粘上面粉, 掸掉多余的,

- 加热一大深锅, 用了8-QT stock pot, 倒入油, 烧热, 放入牛尾, 每面煎金黄,

- 加洋葱, 蒜, 炒软, 加番茄酱炒香,

- 加酒, 鸡汤, 把锅底的焦渣刮松, 开盖烧滚, 让酒精挥发,

- 放入牛尾, 番茄, 桂叶, 加水到淹过肉4寸以上, 烧滚, (番茄可让牛尾易炖烂), 小火炖2小时, 到筷子能插入肉里, 但还是完整的, 用一个撇油的网勺把上面的油撇掉.

- 倒入苡米再炖30分钟, 加入胡萝卜, 土豆, 包菜, 再炖到菜都软了, 加盐和胡椒调味, 就好了.

这是个很好的 one-pot comfort meal.
