俺的近日养家糊口业绩-

百合炒虾-

虾仁用盐水泡过,挤干水分,用蛋清,盐, 酒和淀粉抓过, 油锅炒香姜末,葱花白, 下虾, 炒断生, 加入洗净的鲜百合, 翻炒, 加盐, 胡椒粉, 糖, 香油, 葱花, 苟芑, 拌匀,就出锅.

酸菜麻辣豆腐-

买了一瓶酸菜麻辣火锅底料, 做了这个豆腐,挺好吃的.

油锅炒香蒜, 姜, 葱末, 加豆鼓, 酸菜麻辣火锅底料, 炒香, 加牛肉末炒干, 加酒,炒干, 加耗油炒, 加鸡汤烧滚, 加入豆腐,糖, 胡椒粉, 盖盖烧入味, 勾欠, 淋麻油, 洒上麻辣粉,拌匀,起锅.

麻婆豆腐- 这是传统的做法

椒盐烤小排骨-
排骨用椒盐粉抹遍, Ziploc袋冰箱里过夜, 第二天拿出来, 室温后,喷上橄榄油, 进375F烤箱,烤1小时. 外酥里嫩,好吃极啦.

糖醋黄瓜-

小黄瓜切片后用盐腌四小时,倒掉水, 用白醋和糖(1:1), 腌过夜, 吃起来是非常的脆.

沙茶牛肉-

法兰克牛肉切片, 用酒, 蛋清, 酱油,抓揉, 加太白粉再抓匀, 腌十分钟, 进油锅前加一点油拌匀,

热锅加一点油,下牛肉炒断生,取出, 备用.

热油锅下蒜末炒香, 加两大勺牛头牌沙茶酱, 炒香, 加芹菜丝, 胡萝卜丝, 略炒, 牛肉回锅, 加一点糖, 胡椒粉, 葱段, 拌炒匀, 淋一点麻油, 起锅.

牛肉很嫩,好吃.

牛肉炒辣椒-

法兰克牛肉切片, 用酒, 蛋清, 酱油,抓揉, 加太白粉再抓匀, 腌十分钟, 进油锅前加一点油拌匀,

热锅加一点油,下牛肉炒断生,取出, 备用

热锅加油,炒香蒜,姜末, 蒜茸豆鼓辣椒酱, 加辣椒炒软, 加牛肉,耗油,炒匀,起锅.

炖白菜-

五花肉切薄片跟虾米一起用油煸炒香, 加蒜片,炒香, 加白菜, 磨菇,胡萝卜, 腐皮, 鸡汤, 一起炖烂,加胡椒粉,糖, 勾欠, 上桌.

烤鸡腿-

鸡腿用照烧酱腌入味, 用400F烤箱烤30分钟.

麻辣猪耳-

猪耳用卤汁卤熟后切丝, 拌香菜,自制麻辣酱.

豆芽炒香菜- 自己发的绿豆芽, 太好吃了, 用蒸锅发的, 三天就能吃了,好嫩.

用姜末炝锅, 下豆芽,翻几下,加盐,糖, 加香菜.

先做Sambal Belachen, 我没有红葱头就用甜洋葱和蒜来代替. 这个酱真好吃, 孩子们把它当ketchup来吃.

梅菜蒸肉饼-

广式的甜梅菜, 洗净剁碎, 不要浸泡久, 味道会失掉, 反复地换水洗就好了.

猪后腿肉, 搅碎, 用酒, 香油, 耗油, 胡椒粉, 鸡蛋, 淀粉, 蒜泥, 打上劲后,加梅菜拌匀, 肉跟梅菜的比例是 2:1, 上蒸锅蒸半小时.

鸡丝炒丝瓜-

鸡脯肉切丝用盐,酒,蛋清,淀粉抓腌, 热油锅炒断生, 取出,
油锅炒香姜末, 葱花, 加丝瓜丝炒软, 回锅鸡丝, 加一点盐,糖,胡椒, 拌炒匀,勾欠,淋麻油, 起锅.

炖鸡汤- 近来发现韩国店的鸡特好吃, 新鲜的,比一般的鸡要小很多,但比Cornish hen要大. 炖得汤很象以前在国内吃的味道.

干炒牛河-

法兰克牛肉切片, 用酒, 蛋清, 酱油,抓揉, 加太白粉再抓匀, 腌十分钟, 进油锅前加一点油拌匀,

热锅加一点油,下牛肉炒断生,取出, 备用

油锅炒香蒜末, 葱白末, 下泡软的米粉, 炒香, 加老抽,生抽,酒, 胡椒, 耗油, 加牛肉, 豆芽, 护萝卜丝, 甜洋葱丝, 青葱段, 翻炒匀,淋麻油.

绿豆糕-

去皮绿豆 1 杯,
水6杯,
糖 1 杯,
洋菜 ¼把, 或吉立粉2TB

去皮绿豆 用水烧开, 炖烂, 加糖, 洋菜, 煮化, 倒入blender,打成泥, 倒入方盘里, 冰箱冷却, 切块. 很间单, 很好吃.

凉拌意面-

罐头鸡脯肉, 午餐肉(Spam), Feta cheese, 黄瓜, 番茄, 甜洋葱, olive, 黑胡椒,柠檬汁,橄榄油, 盐, Parsley.

清蒸螃蟹 –

买回来刷干净, 用冰水镇一下, 背朝下放进蒸锅, 15分钟就可吃了,用醋,糖,姜泥,麻油调个酱.

胡萝卜蛋糕- William-Sonoma 的方子,

Cake: 1) Sift and combine the following dry ingredients in a bowl: 2 cup cake flour 2 tsp baking powder 2 tsp baking soda 1 tsp salt 1 tsp ground cinnamon ¼ tsp ground mace

2) Mix the following wet ingredients in a large bowl: 1 ½ c of sugar 4 large eggs 1 ¼ c of canola oil zest of 1 orange add 4 large carrots, peeled and grated, about 3 cups or 1 LB

3) fold in the dry ingredients into the wet ingredients until fully incorporated

4) Stir in the following: ½ cup of raisins, plumped in hot water and drained 1 cup of walnuts toasted and chopped, I used almond toasted nuts

Butter and flour two 10” cake pans, pour the batter into the pans and bake in pre-heated 350F oven for 35-40 minutes, toothpick inserted into the center and comes out clean.

Cool on in the pan on a wire rack for 15 minutes, invert them out on the rack and let them cool completely.

Frosting: ½ cup unsalted butter, at room temperature 1 LB cream cheese, at room temperature 10 oz white chocolate, melted Juice of an orange 2 tsp vanilla essence, clear color use zest of an orange for final garnishing

Use a hand mixer to cream the butter and cream cheese, then add the rest and mix well.

I used toasted sliced of almonds to cover the frosting since I am not good at decorating the cake. 非常好吃.

The cake is so moist. The frosting is so good; it is made of cream cheese, melted white chocolate, butter, fresh orange juice, lemon zest.
