煎土豆饼,早餐蛋饼,胡萝卜马芬,煎鱼饼,夹肉饼

周末放松了一下,做了几个费时间的小吃的:

煎土豆饼, Hash Brown

food processor 打碎的土豆丝, 冷水冲过, 一是为了洗掉一点淀粉, 二是颜色不会发黑, 沥干后, 撒一点盐和胡椒, 拌匀,

注: 用红土豆淀粉可少吃点.

铁锅烧热, 加橄榄油, 倒入土豆, 中火烙到金黄, 边烙边把周围往里推, 同时压紧表面, 翻一面再烙金黄, 脆香,就取出.

早餐蛋饼, Breakfast Frittata- 以前做过不同料的.

这次有:

蛋, 意大利腊肠去掉肠衣, 磨菇, 红椒, 甜洋葱, 青葱, 芹菜, 奶酪,

不粘平底锅, 可入烤箱的, 烧热, 放腊肠, 炒出油, 加洋葱炒透明, 加磨菇, 红椒, 青葱, 芹菜, 炒软, 撒盐,胡椒, 倒入打散的蛋, 用铲略把菜推动让蛋滲透到底部, 稍定型, 表面铺奶酪, 进400烤箱, 大约5分钟, 表面金黄,就取出.

胡萝卜马芬, Carrot muffin

1) 干料:

1 ½ C 中筋面粉,
½ c 玉米面, corn meal
¼ C 麸皮,
2 tsp baking powder
½ tsp baking soda,
¼ tsp salt
1tsp cinnamon
2/3 c 红糖,


2) 湿料:

2 蛋,
1 ½ C 酸奶,
¼ butter, 化过,

3) 添料:
2 1/2 c 胡萝卜碎,
½ c 葡萄干,


4) 撒在表面的:
2 TB 白糖,
1 tsp cinnamon


5) 抹酱:

8 oz cream cheese
1 cup lemon honey jelly


做法:

(1) 料放一盘里拌匀, (2) 料放一大盘搅匀, 加入(1), 拌匀, 加入(3)拌匀, 倒入模里, 撒上(4), 进400预热烤箱,烤20分钟, 竹签插入取出光滑,就好了. 配上(5)吃.

煎鱼饼-

新鲜鱼浆一合, 1LB
肉末, 2两,
蛋, 3个,
太白粉, 2TB
香菜, 1把,切碎,
胡萝卜,2 根刨丝,
白糖, 1TB
鸡粉, 1 tsp
苏打粉, baking soda, ½ tsp
白胡椒粉, 1tsp,
白酱油, 2TB

以上拌匀, 用锅两面煎黄, 配甜辣酱吃.

学做夹肉饼- 刚电视上看来的.

中筋面粉, 先加烫水,用筷子拌匀, 再加一点温水揉几下, 就让面醒20分钟, 就杆开, 面要软面, 不需死揉, (因为面软, 不好杆薄, 还要用刀把面翻起) , 师傅是这样教的.

这样拉四刀,

抹馅, 用肉末, 解冻,切碎的荠菜, 鸡蛋, 太白粉, 鸡粉, 香油, 盐, 胡椒拌的.

稍轻压扁一点,

热锅里抹少量油, 放进饼, 盖好盖, 慢火焖煎.

翻面再焖煎, 两面金黄香脆,就好了.
