泼辣鱼-

- 猫鱼肉片, 用酒, 白胡椒, 盐, 蛋清, 淀粉, 姜丝, 抓好, 冰箱待会儿.

- 鸡汤两罐,再对一杯水, 加一点酒, 盐, 味精, 一点糖提鲜(不是要吃甜味), 中火烧滚,

- 捞出香料来,

- 这时另起一小锅到入冷油和干辣椒,慢火熬香, 变褐红色,但不要焦,

- 改中小火, 一片一片往里加鱼片, 不要搅动, 略烫一下,鱼片变色, 加入泡过冷水沥干的粉丝, 一滚就装大碗, 马上把热油熬香的干辣椒浇上, 开吃.

再来个生滚鱼片粥-
用电锅加米和鸡汤, 水, 煮的白粥, 倒入汤锅里, 放炉上, 加一点糖, 盐, 两个皮蛋切块, 再烧滚, 加入上面同样腌过的鱼片, 轻滑散, 关火, 略焖煮, 好了.
碗底放一点切碎的生菜, 勺进滚粥, 撒葱花,香菜, 白胡椒,吃吧.
