意大利辣肠烤面- Spicy sausage lasagna:
我家很爱吃这个意大利面酱做的各式意面, 有时会小改动一下, 看手上有哪些材料而定. 这次做成烤面片, 很好吃.
For sauce:
2 TB olive oil
2 LB spicy Italian sausage (I used 7 links, from Costco), remove the casing
1 tsp of hot pepper flake
1tsp dried oregano
1 tsp black pepper
1 tsp fennel seeds (小茴香)
1 onion chopped
4-5 clove of garlic minced
½ cup of red wine
1 can of black olives chopped
1 can of tomato paste
1 can of tomato sauce
1 TB sugar
½ tsp salt or omit it
Lasagna noodles 9 sheets (I used no boil kind)
8 oz shredded mozzarella cheese
½ cup of grated parmesan cheese
2 cup of quark – (浓酸奶), you can use ricotta cheese
我把自做的酸奶沥掉水份就是了. 这个浓酸奶还可用来做别的, 象点心类, 印度菜等. 可以代替cream cheese, sour cream, 等.
做酱:
用olive oil炒辣肠,炒金黄, 把多余的油到掉, 加干香料, (pepper flake, dried oregano, black pepper, fennel seeds) , 炒香, 加洋葱炒软,加蒜,炒香,加红酒, black olives, tomato paste, tomato sauce, sugar. 小火焖 30 分钟.
组装面:
放一些酱在 9”x13” 烤盘底面, 抹平, 铺三张面片, 加一层酱, 一层mozzarella cheese, 和酸奶, 再铺一层面片3张,加 sauce, mozzarella, quark.再一层, 最后洒上parm cheese. 进 350F 烤箱烤 35 分钟.
做了个沙拉:
Tomatoes, cucumber, avocado, chopped green onion and cilantro, lemon juice and olive oil, salt and black pepper.
Costco 买的 sausage 还剩一合, 就又做了一次酱. 这次没有去掉肠衣, 只是把辣肠切成小段象小肉丸子似的. 酱里也改用了一罐 dice tomatoes 代替了tomato paste ,味道淡一点. 用了 linguine pasta.
