这几天做的菜:
懒人版的咸烧白-
我的四川朋友推荐给我的宜宾芽菜, 一直想做咸烧白, 但都怕用传统的做法麻烦, 就想了个懒人法, 没想到效果很好.
用韩国店买的切好片的五花肉, 用酒,酱油, 糖, 胡椒, 还用了甜酱油(sweet soy sauce)做糖色, 为了上色但不加咸味, 怕芽菜太咸,不敢多加盐, 腌1小时, 再拌一点太白粉和油, 把肉片排好在碗底,
芽菜,我还是冲了水,沥干, 拌入姜油, 和一点鸡精, 铺在装了肉的碗里.
用保鲜纸封住碗口,进大同电锅, 外锅加3 杯水, 蒸熟后, 把碗里的汁到进锅里, 再倒扣在盘里,
锅里的汁加热, 勾欠,淋香油, 再浇在肉上面. 很方便吧.

排骨淡菜汤-
排骨飞水切块, 跟淡菜, 泡过水的香菇, 水, 用慢锅炖烂, 加苟杞, 盐, 糖, 再炖一下,好了. 味道很好.

剁椒石斑-
很新鲜的石斑, 本想做广式清蒸, 后来觉得倒底不是活的鱼, 就加了红翻天剁椒.
鱼用米酒, 盐, 胡椒腌了半小时, 盖上一些剁椒,姜丝, 蒸10分钟, 放香菜和葱丝, 浇上热油, 好了.

娃娃菜烧干贝—
干贝泡软, 进油锅炒一炒, 放上娃娃菜, 加泡干贝的水, 一点盐, 糖, 鲍鱼汁, 盖盖慢火煮软娃娃菜, 把菜取出装盘, 把锅里的汁勾欠, 撒胡椒粉, 淋香油, 再浇在菜上.

大妈猪的排骨西洋菜汤-
排骨, 鸡汤, 南北杏, 苟芑(没有蜜枣), 用干马兰头代替了西洋菜.

糖醋带鱼-
带鱼用油炸金黄,
油锅炒香姜丝, 葱段, 红椒丝, 加混合调料 (糖2TB, 醋2TB, 胡椒, 味精, 生抽, 一点老抽, 绍酒, 水淀粉), 烧成糊, 加带鱼,拌匀, 淋香油.

薄荷叶炒鱿鱼- 这次用了小鱿鱼, 清洗麻烦一点, 比大的好吃.
小鱿鱼清理干净,切块, 过开水烫过,再过冷水, 沥干,
锅里热油炒香姜丝,葱段, 红椒丝, 放鱿鱼, 加鱼露, 甜酱油, 糖, 胡椒粉炒几下, 加薄荷叶, 起锅.

炒青菜- 勾了欠.

干煎咸黄鱼-
韩国店买的咸黄鱼, 用水冲了一下,用纸吸干水后,在外面炉上用不粘的griddle煎的, 很好吃, 并不很咸.

萝卜樱炒蚕豆- 以前上过类似的, 做法不完全一样, 就再写一下.
萝卜樱洗净切碎后用盐杀掉水分,
锅里用油炒姜末,和辣椒末, 加肉末炒, 加辣豆瓣酱炒, 加酒, 加萝卜樱, 加糖炒, 淋香油, 撒胡椒粉, 好了.
