-BASA 鱼切片用盐,酒,蛋清, 淀粉腌20分钟,
-取一碗放酒,醋,糖,酱油,麻油,淀粉, 少量高汤, 留用,
-黄瓜切片,留用.
-油锅炒香葱,姜,蒜,辣椒末, 辣豆瓣酱, 炒出红油, 下鱼片, 轻轻推动, 鱼片变白色后,加黄瓜,再轻翻几下, 加配好的调料, 拌几下, 芡绸了, 撒上蒜苗, 上菜.

豆腐蒸蛋—一合嫩豆腐切小方块,用放了盐的开水 (有个烧开水器,随时有开水) 泡一下沥干放大碗里, 撒一些切碎的榨菜, 虾皮, 胡椒, 4个蛋打散, 加1 罐鸡汤(我在COSTCO买很多罐头鸡汤, 很方便, 做菜都用它代水用), 倒入碗里, 放4片有肥的腊肉, 用保鲜膜包好碗口,进蒸锅,中火蒸40分钟.
