上一道香口开胃简单易做的小菜祝大家暑期开心愉快.
材料:石班鱼片,虾仁,鸡蛋1个,蒜,姜,葱,辣椒,鱼露,醋,糖,味精.
制法:姜,葱,辣椒切成丝备用,鸡蛋打散备用,石班鱼片洗凈用纸吸干水再切成大小均匀一片片,虾仁垛成茸,加料酒,蒜茸,葱花,盐,糖,味精再顺一个方向用力搅成胶放入冰箱冷藏二小时.热油锅再转为中上火,用鱼片包住虾胶弄成卷形状,微沾上生粉后再过鸡蛋浆微里均匀蛋汁再次薄沾生粉,放进热油炸成金黄取出沥干油摆盘备用.再热平底油锅放二匙油,爆香蒜茸后,转中小火放入姜,葱,辣椒丝微伴,放鱼露,醋,糖,味精调成酸辣汁后再转大火让酸辣汁变稠后倒在脆鱼片卷上即可出菜.
