酒的鉴赏家们一致认为每一种酒都有一种特别形状的酒杯与之匹配,这种匹配可以使酒的特色显现到极致。我给大家一个小例子就可以表明这个道理了:

如果用一个狭长的玻璃杯装rich Burgundy(一种醇厚浓烈的葡萄酒),就不能有足够的空间让酒在杯中打旋,而打旋正是彰显酒的芳香之关键所在。 同时装葡萄酒的酒杯还要有合适的锥度--由下至上逐渐变细, 这样可以减缓香气向外扩散,增强香气在杯口的浓度。同时这个锥度还要让饮者优雅舒适地啜饮酒。另外,杯子脚的长度要能放下握杯子的手,这样呢,手就不会接触到杯体,酒的温度就不会受到影响,从而也就更加有利于突出酒的香气。

下面让我们看一下酒与杯是如何“门当户对”的:

1,冰水(water):矮脚玻璃杯。 饮水时手握脚柄,可以保持水的冰度。

2,白兰地(Brandy): 白兰地专用窄口酒杯。倒酒前可用两只手围握杯体一小会儿,在倒酒时用一只手握着杯体,刺激的白兰地在倒入杯中的一霎那,因着骤然的温暖立刻腾升成雾了。轻轻一吸,你也许就醉了

3, 白葡萄酒(White wine) : 用较小的一种宽体窄口高脚玻璃杯盛装以便保留香气。饮用时手握杯脚,这样可以保持酒的低温。

4,极品干红葡萄酒(Burgundy Reds and Piont Noirs):盛装此酒的杯子比装白葡萄酒的酒杯高一些,借以增大香气的集结空间以显示出酒的复杂性。

5,香槟酒(Champagne):用窄长的香槟酒玻璃杯盛装。 这样可以减少酒与空气的接触表面积,含充在香槟酒中的气体逃逸的速度会减慢。

6,红葡萄酒(Red wine ):比装白葡萄酒的酒杯大一些, 因为红酒比白酒呈味复杂。

顺便谈谈白酒与红酒的区别,哈哈,简单的说是颜色区别。从制作工艺上来讲呢,在白酒的制作前原料要进行去皮脱色等精加工,而红酒的制作就么没有这道工序。所以一般来说,做白酒较做红酒工艺复杂。但酒工艺是一门艺术,未经提纯的原料在发酵过程中给终产品提供了一些未知的微量呈味呈色有机物,而这些莫名其妙的物质将会给饮者带来无穷的享受。白酒与红酒的饮用场合,在西餐中有一定的规则,我们留待以后谈。
