烤鹌鹑胸配柠檬小葱汁
我问朋友,你要吃什么,朋友说,恩~~~烤乳鸽吧,其实说的是鹌鹑,这个朋友对吃的满有一套了,于是买了几只鹌鹑烤起来吃,看他吃的样子还不忘记做手势, 说明一下这个时候还没开饭,他已经受不了诱惑先开吃了最后他吃了6只腿
材料:鹌鹑,味全特级酱油,美极鲜酱油,料酒,白糖,鸡精,姜末,蒜末(味全酱油可用生抽代替.)

Ingredients

* 4 whole quail
* salt and freshly ground black pepper to taste
* 1 tablespoon olive oil
* 1/2 teaspoon cumin
* 1/4 teaspoon coriander
* pinch cayenne, optional
* 1 cup chicken broth
* 1 slice cured lemon, minced fine


Instructions
Step 1
Put 4 whole quail in a large bowl. Then add 1 tablespoon olive oil,
1/2 teaspoon cumin,
1/4 teaspoon coriander,
and a pinch cayenne in the bowl. Stir well.
Step 2
Stuff 1 slice cured lemon in each quail. Use a string to go under the breast,
and tie the back. Make another 2 loops to tie the legs.
Step 3
Add 1 tablespoon olive oil in the pan over med-high heat. Brown the bottom side of the quail. Then flip the quail. Add 1 slice cured lemon on the top of each quail. Drizzle some cayenne on the lemon.
Step 4
Cook the quails in an oven at 425F for 10-15 minutes.

Step 5
Remove the quails from the pan. Add 1 cup chicken broth and 1 slice minced cured lemon in the pan. Turn the heat to low. Return the quails in the pan.
Spoon the sauce over the quails.
Step 6
Transfer the quails to a serving plate to serve.

制作:
1:鹌鹑洗干净加入除蜂蜜以外的所有调料淹制半天,鹌鹑用牙签搓几个洞,这样淹制会入味,中途翻过来淹制一下.
2:淹制好的鹌鹑拿出放烤网上,烤盘里垫锡纸这样出来的汁不会弄脏烤箱.
3:烤箱预热200度8-10分钟,时间到把烤盘放最后一层,鹌鹑放中层烤40分钟.最后5分钟撒上白芝麻刷上蜂蜜,时间到可取出稍微凉凉即可食用.
40分钟之间烤鹌鹑的时候中途推出来刷两次调味料就是淹制过的酱汁,根据烤箱温度来控制,最后观察不要焦掉.
