Then add 1 tablespoon olive oil,<br>1/2 teaspoon cumin,<br>1/4 teaspoon coriander,<br>and a pinch cayenne in the bowl. Stir well. <br>Step 2 <br>Stuff 1 slice cured lemon in each quail. Use a string to go under the breast,<br>and tie the back. Make another 2 loops to tie the legs. <br>Step 3 <br>Add 1 tablespoon olive oil in the pan over med-high heat. Brown the bottom side of the quail. Then flip the quail. Add 1 slice cured lemon on the top of each quail. ![](http://www.bethecook.com/media/9/croutons1.jpg><br><br>视频: http://www.bethecook.com/recipes/Garlic-Parmesoan-Croutons-<br>今天要向大家介绍的是凯撒沙拉( Caesar Salad)。这个大名鼎鼎的沙拉其实和古罗马的“凯撒大帝”没有任何关系。“凯撒”是创作这道沙拉主厨的名字。发源地是美墨边境一家位于 Tijuana(提娃那)城的小餐馆。1924年,义大利主厨Caesar Cardini用了手边仅剩帕马森起司,橄榄油,腌制凤尾鱼,和英国酱油醋(Worcestershire Sauce)等调制成的酱汁,和生菜混合在一起。最后撒上面包丁,创造出了这道经典的凯撒沙拉。凯撒沙拉广为流传后,有些主厨也会添加鸡胸肉、培根等,调配除了不同风味。<br><br> 虽然菜式需要创新,但创新中又蕴含着传统。很多名菜都是有着自己的身份识别,如同华道夫沙拉(Waldorf Salad)的核心食材是芹菜,苹果核桃肉。尼斯沙拉(Nicoise Salad)的标志是番茄,橄榄和咸凤尾鱼一样。凯撒沙啦主要原料为生菜(Cos Lettuce),凯撒沙拉酱和油炸面包丁。<br><br>备料:1,洗净生菜叶子,最好选用Cos Lettuce,中文翻译成莴苣。实在买不到,请用其他生菜代替。沥干水分后入冰箱冷藏。<br><br>2,制作Crouton<br>Crouton(油炸面包干)的制作方法:<br>简易做法:将2片白面包切成指甲盖大小的小丁,然后平底锅烧热,放半杯橄榄油。翻炒直至面包丁颜色金黄。放厨纸上吸取多余的油。<br><br>更正宗的做法是不用炒锅,用烤箱。把面包丁混合橄榄油后放烤盘上,在烤箱里用200度以上的高温用上火烘烤几秒钟,直至颜色变金黄。<br><br>如果你想让你的面包丁更美味,建议做成蒜香Crouton。非常好吃,强力推荐。剁些蒜泥,然后入炒锅和橄榄油同炒。炒出香味后可以把油盛在一个瓶子中保存,过1-2天后蒜香扑鼻。蒜油就做好了。然后用这个蒜油代替普通的橄榄油来制作Crouton。<br><br>3,培根切成小丁,入炒锅煸熟。原始的凯撒沙拉是不加培根的,但后来改进版本加入了这道食财,个人喜欢加了培根的味道。<br><br>4,从冰箱里把沙拉叶取出,撕成可以适合入口的小块,然后和油炸面包丁,培根,帕马森奶酪粉和凯撒沙拉酱混合在一起。装饰上可以再加入几片帕马森奶酪片。有的厨师也喜欢放个水煮荷包蛋放上面。还有的厨师会放切成块状的煮鸡蛋拌在沙拉里面。<br><br>5,至于凯撒沙拉酱汁的制作,由于用料比较复杂,所以建议直接用从超市买来的瓶装凯撒沙拉酱。<br><br> 当然,我这里还是贴出一个酱的配方,送给高级班的同学。<br>蒜 2瓣剁碎,与罐装咸凤尾鱼60克(Anchovies)一起入搅碎机(Blender)搅拌,加入芥末粉,英国酱油醋(Worcestershire Sauce),柠檬汁2滴,胡椒适量,鸡蛋黄一个搅成酱。然后一点一点往里加橄榄油125毫升,边加边搅拌,蛋和油一定要充分混合。方法如同做蛋黄沙拉酱,最后形态和质感也如同美奶滋沙拉酱。也有很多配方上是先把蛋给连壳煮一下,半熟,蛋液还未完全凝固时取出蛋液代替我上文说的鸡蛋黄。<br> <br> 看到这里,大家都明白了吧。这道声名显赫的沙拉从头到尾都和凯撒大帝没什么关系,只是碰巧发明这道菜的主厨叫凯撒。<br><br>Ingredients <br><br> * 4 cloves garlic, minced very fine<br> * 1/2 cup olive oil<br> * 1 (8-ounce) loaf French baguette or similar style bread<br> * 3/4 cup finely grated<br> * 1/2 teaspoon dried Italian herbs<br> * 1/2 teaspoon paprika<br> * 1/2 teaspoon salt<br> * 1/2 teaspoon freshly ground black pepper<br> * pinch of cayenne<br><br> <br>Instructions <br>Step 1<br> <br>Add 1/2 cup olive oil and 4 cloves minced garlic in a bowl. Let infuse for a few hours at room temperature.<br> <br>Step 2 <br>Cut the French baguette into half then into half, then into quarters. Cut each quarter into 1-2 inch pieces. Throw them into a bowl. Strain the garlic and olive oil mixture over the baguette pieces. Toss well. <br>Step 3 <br>Dump in 3/4 cup finely grated real Parmesan cheese (sold as Parmigiano-Reggiano),<br>1/2 teaspoon dried Italian herbs,<br>1/2 teaspoon paprika,<br>1/2 teaspoon salt,<br>1/2 teaspoon freshly ground black pepper,<br>and pinch of cayenne in the bowl. Toss well. Dump the whole mixture on a mat over a baking sheet. Spread them in a one layer. <br> <br>Step 4 <br>Bake at 300F for 15 minutes. Then toss and bake for another 15 minutes.<br>Remove, use a spatula the push the bread pieces together, add some Parmesan cheese. Return to oven and cook until done\)

Set aside.<br>Halve 3 lemons. <br>Step 2 <br>Add the crushed garlic, 4 sprigs thyme, 2 sprigs rosemary, Lemons juice,<br>salt and fresh ground black pepper into a large bowl. Mix well. <br>Step 3 <br>Put the chicken into the bowl, rub the chicken around with the mixture.<br>Then stuff the chicken with the mixture. Leave it with breast side down. <br>Step 4 <br>Peel and slice the onion. Spread the onion slices on a roasting pan.<br>Then put the chicken on the top. Tuck the chicken wings into the chicken body.<br>Use a string to tie the chicken legs together. <br>Step 5 <br>Drizzle the chicken with the juice in the bowl and olive oil.<br>Preheat oven to 400F, and roast the chicken for 1 hour and 15 minutes. <br>Step 6 <br>Meanwhile, Put 2 bunch watercress into a large bowl. <br>Step 7 <br>After the chicken is done, put the chicken into a large bowl, let rest at least 10 minutes. <br>Step 8 <br>pull the fat out of the roasting pan. Now the pan is still very hot.<br>Add 1/2 cup chicken stock or broth into the pan, rub off the sticking things in the pan.<br>Strain the mixture in the pan on a bowl. We can get the sauce in the bowl.<br>add in juice of half lemon, some salt and 2 tbsp walnut or hazelnut oil. Mix well. <br>Step 9 <br>Now cut and carve the chicken.<br>Put some chicken shred into the watercress bowl. Pour in some sauce.<br>Stir well.<br>Then place the watercress on a plate, and place chicken pieces onthe top of the watercress. Spoon some sauce on the chicken pieces.<br>)
