红烧带鱼,儿时的最爱。是逢年过节才能吃到的菜肴。每年都是老爸掌勺,每次都是一成不变的好吃。如今老爸已经不下厨了,我给他做这道菜的时候,他总是赞不绝口,一个劲的说好吃。

原料:
带鱼两条
葱白,姜,蒜 和干辣椒
醋,糖,油,淀粉,料酒
做法:
1.带鱼洗净,切块,用料酒和盐腌半小时。

2.热锅烧少量油,带鱼上加少量淀粉

3. 搅拌均匀

4.油热,开始煎带鱼

5.煎鱼的同时,准备葱姜蒜

6. 鱼煎两面金黄,捞出.

7.在同一个锅里倒油,大火,凉油时,下一勺糖,糖开始冒泡,变色后加入葱姜蒜.这一步是关键.火候不到,带鱼没有颜色,火候过了,带鱼颜色发黑.

8.翻炒葱姜蒜,超出香味

9.加鱼.轻轻的翻炒至每一块鱼上都沾上糖色.

10.加一杯开水,醋,糖,盐,小火煮五分钟.加入葱段,大火收汁.
11.撒点葱丝就好了.
