It is the hardest part of the chicken, and if possible, do not boil it in water as chicken, especially the non-organic ones, stink after boiling. I would not touch chicken cooked that way myself. Try to use organic chicken and use the part from the hind wing (the part connecting the wing and the body) as this part contains tender meat. You can either stir-fry the thinly sliced meat (use corn starch and egg white to keep the meat tender) or stew the whole thing (but brown all side in oil before adding water and other spices).
