中秋节。^ - ^ 第一次学做,希望下次会更好。今天上午9点钟送完孩子上学后就开始动手做月饼。前几天就开始仔细研读去年存下的贴子。去年在私房看到为为等高手做的月饼真是超级羡慕,也想试一试,因为全家都爱吃月饼。所以就在网上也买了一个模子,订的是圆的,拿到手后发现是方的,也只好将就了,退回去麻烦又花时间。忙了一上午,烤出来后没想到字全没有了,55555........什么原因?

做法如下:
A。外皮的做法:1。面(ALL PURPOSE FLOUR):3 CUP
2。糯米粉:1 CUP
3。稣油(SHORTENING):1/2 CUP
4。盐:1 匙
5。奶(EVAPORATED MILK):1 CUP
6。SYRUP:1/3 CUP
7。油(OLIVE OIL):1/3 CUP
8。 糖( SUGAR):1/2 CUP
9。苏打(SODA):1/2匙
把所有东西放在一个大盆里饺拌好,醒一个小时。

这个面团可以包26个月饼。

B。豆沙馅的做法:一种是在店里买的现成的,太甜,所以又煮了红豆:2杯豆,4杯水。煮烂等凉后再放到锅里用油炒。和买的饺在一起,尝后感觉甜淡正好,先把豆沙搓成丸子放在冰箱1小时(有的说放一晚上)。

C。包月饼:俺看了几个贴子都没如何包月饼,俺就试试用包园宵的方法把月饼包好。面团是豆沙馅的1/3。放进模子之前把炒熟的糯米粉洒进去,这样月饼才能倒出来(每安一次月饼前都要放粉)。
这是炒好的糯米粉

D。烤月饼:烤盘上洒了COOKING SPRAY 防沾。月饼上面刷蛋黄,让月饼看起来好看。放进烤箱最上层,350F先烤5分钟,拿出来把烤箱调低到300F,在月饼上轻轻刷一层蛋黄液(我只用了1个蛋黄加1小匙水调匀),放进烤箱再烤10分钟。取出来再刷一层蛋黄液,烤5分钟做最后的上色。
