越南肠粉

材料:米粉一包,水5杯,猪肉碎一碗,虾肉一碗(切成小丁),木耳一抓(泡发,切丝),胡罗卜一条(切丝),洋葱一个(切粒),红葱头8个(切粒),蒜茸,油,盐,鸡精。
做法:

1 先将米粉加水浸至少一晚且多搅拌(比例为:一包粉大约5杯水)。
2 烧热半杯油加红葱粒爆香,将爆好的红葱和油分开盛起备用。

3 热锅下油放洋葱,蒜茸爆香,再下木耳丝,胡罗卜丝炒熟盛起备用。
4 分别炒熟炒香猪肉碎和虾肉再和炒好的木耳丝,胡罗卜丝一起拌匀加盐,鸡精调味盛起。

5 用布扎实锅口(布要绷紧),在布上近锅边的位置开一个小口。锅里加入半锅水,烧开。

6 舀一勺米粉水在布上,用勺底将米粉水划开(要快),盖上盖子待米粉水蒸熟(透明,大约十秒)。用竹篾挑起,放在刷了红葱由的案板上,放一匙馅包好。
