WHOLE WHEAT BANANA BREAD
3 tbsp. butter, at room temp.
1/3 c. honey
3 eggs, beaten
1 c. mashed banana, thawed if frozen
1/2 c. orange juice (or water)
1 tsp. vanilla extract
1/4 c. powdered milk
2 tsp. baking powder
1 tsp. baking soda
2 c. whole wheat pastry flour
1/2 c. chopped walnuts
1/2 c. raisins
In a large bowl, beat butter and honey together until light. Add eggs, banana, orange juice and vanilla. Beat well. In a medium-size bowl, combine powdered milk, baking powder, baking soda and flour. Stir to mix together. Add the dry mixture to the banana mixture, blending with a few strokes. Add walnuts and raisins; blend again, lightly.
Turn batter into a buttered 9x5-inch loaf pan. Bake at 325 degrees for about 1 hour, or until well browned and a cake tester comes out clean. Cool 10 minutes before removing from pan. Cool completely before slicing or freezing.
This bread can be thawed at room temperature in 3 to 4 hours.
