Today is food demostration by our nutritionist-to make a whole wheat pancakes with balsamic strawberries and yogurt using the prebiotic and probiotic ingredients which are important to health. An adult needs 3 to 4 bounds of healthy bacteria per day to maintain a healthy digest system.
Ingredients:
strawberries in Balsamic vinegar
2 cups fresh strawberries (prebiotic)
2 tbsp balsamic vinegar(check label for grapes to be used)(probiotic)
1/4 cup white sugar
Pancakes
3/4 cup whole wheat flour(prebiotic)
1/2 cup all purpose flour
1 tbsp baking powder
2 tbsp granulated sugar
1 egg beaten
1 1/4 cups Kefir(probiotic)
2 tbsp vegetable oil
activia yogurt(probiotic)
Garnish(optional)
A fresh mint or basil leaf looks terrific!

Method
Strawberries in Balsamic Vinegar
1.place strawberries in a glass bowl.Drizzle balsamic vinegar over strawberries and sprinkle with sugar.Stir gently to combine.Cover and leet sit at room temperature for half hour,but not more than 4 hours.(Berries get mushy if eaten after 4 hours).
Pancakes
1.In mixing bowl,combine whole wheat and all purpose flours,baking powder and sugar,stir to mix.Pour in egg,kefir and oil,and stir until dry ingredients are wet.(do not worry about a few small lumps).
2.Heat nonstick skillet over medium heat until hot.Lightly grease if necessary.Drop large spoonfuls of batter into skillet to form rounds.Cook until surface is full of bubbles that start to pop and do not fill in and underside is golden brown.Turn and brown other side.
3.Spoon yogurt over each pancake and top with balsamic strawberries.Grind a bit of black pepper over the strawberries if you want a more exotic taste.Makes approx.12 four inch pancakes.
We all tasted the pancakes after all. I must say it was very yummy. I love it.
