香糟卤汁的制法--by Rolling

避风塘炒虾
材料:虾15个,生菜叶子(用来装饰),盐
避风塘调料:蒜6个,小红椒1个(爱吃辣的可多放),面包粉4大勺,椒盐1勺,葱白,葱花,料酒个少许

做法:
1.虾减去虾须和虾头上的那根尖刺,洗净后,用剪刀分别在虾背和虾肚开片,拉去肠线,用细盐撒在虾身上使入味。
2.油锅烧旺,将开背虾投入油锅中大火炸,至虾壳呈松脆状、虾背爆开时,捞出虾,沥干油;
3.油锅留少量油,将切碎的蒜末入油锅煸炸,待蒜粒呈金黄色且有蒜香飘出时,捞出蒜末在碗中与面包粉末拌匀;4.红辣椒半个切小丁,葱白切小丁,均倒入刚才炸蒜末的油锅里煸炒,然后倒入沥过油的虾,并迅速倒入一小勺料酒增香,接着倒入一小勺椒盐,翻炒数下后,倒入蒜粒面包粉翻炒,使面包粉、小红椒丁、葱白丁都均匀地裹在虾身上后,关火,撒葱花后即可装盆。

蒜茸粉丝开边虾
粉丝开水泡软后垫盆底, 虾洗净去泥肠,铺在粉丝上.
锅内少许油烧热后加蒜茸爆香,熄火,加少许盐,鸡精,料酒,蒸鱼豉油拌成料汁浇到虾上.热水烧开后入锅蒸8-10分钟(具体根据虾的大小决定),出锅后洒上葱丝,浇热油.


香糟卤汁
糟腌:第一种简易法是用香糟卤和精盐作为主要调味品的腌制方法.香糟卤制法是将鲜或高汤倒入锅内,加盐、葱白若根、姜块几大块拍碎,然后将汤烧沸,离火冷却后把汤倒入酒糟中搅拌均匀, 再用麻布滤出的卤汁然后再加入黄酒、味精调和均匀即成香糟卤.
第二种是用滤过残渣的卤水或老卤汁加入酒糟搅拌均匀, 再用麻布滤出的卤汁然后再加入黄酒,味精调味搞匀即成香糟卤.

卤水制作:八角约二十个,姜三大块拍爛,花椒半碗,肉桂二大块,陈皮五大块,沙姜粉二匙,丁香十八个,草果八颗,蒜头二十粒,葱两大把,鲜辣椒二十粒,干辣椒二十粒,黑胡椒粒半碗,黑酱油一碗,料酒半碗,盐,冰糖半大碗,味精.小火热干锅,放八角,姜块,花椒,肉桂,陈皮,丁香,草果,蒜头,干辣椒,黑胡椒粒慢火炒出香味,然后加水要浸盍过鴨子煮二小时再放葱,鲜辣椒,黑酱油,料酒,盐,冰糖,味精再开小火熬多二小时再试与调味后熄火凉后便成(让新卤水味道融合与温纯,刚开始卤的第一至第五支鸭子的味道中中,经过五支鴨子卤过的鹵汁开始味道开始香而浓淳了…).

纯好份高汤,加盐,葱白,姜块烧沸滤出加入黄酒、味精调和均匀即成香糟卤...

比目鱼的潮州卤鸭
挑走地鸭,不肥,4到5磅大小正好.
1. 鸭子沥干水,用盐把里里外外摸上盐,肚里再塞进一大勺姜丝.腌半个小时.
2. 大铁锅少许的油,煎煎,快好时加入两大勺姜丝一起煎煎.大概15到20分钟,待到锅里的油多水少时,倒入大概5大勺的料酒,炝炝锅.
3. 放水,鸭胸朝下,以腌到鸭子一半为准.加入7,8大勺酱油,5大勺黑糖,3片桂皮,1大勺花椒,2大勺五香粉,4个八角,3根葱,中小火20分钟.翻个再煮20分钟.
4. 倒入2大勺老抽,大火收汁,边收汁边用勺子把汤汁浇在鸭子上,中间翻翻个.大概8到10分钟.
5. 潮汕菜喜好用蘸料,半个大蒜一点青红辣椒剁碎,倒上醋一和,搞定.
吃不完冻起来,懒做饭时,下个面条,随便扔些绿青菜红番茄,夹两块鸭肉,浇上些卤汁,这面条,嘿嘿......
tips:
1. 大铁锅倒少许的油,把鸭子前后左右用中火耐心的煎煎,这道很重要,要把鸭的肥油和骚味煎出来,快好时加入两大勺姜一起煎煎.看到锅里的油多水少时,倒入大概5大勺的料酒,炝炝锅.这道是鸭子香而不骚的关键.
2. 味道淡不可加盐,要加酱油,同时配上适量的黑糖.
自制老干妈豆豉风味辣椒酱
材料与份量:菜油两大半碗,豆豉一饭碗满,干辣椒一饭碗满,灯笼干辣椒半饭碗(我爱辣故选用它),郫县豆辨酱两大匙,花椒一匙半,八角三颗,料酒两大匙,糖四大匙,黑酱油两匙,味精一匙。
制作:豆豉用溫水泡十五分钟(去盐份)沥干水分,再分出一半搅碎成豆豉面一半留原粒备用,干辣椒与灯笼干辣椒用搅碎机搅至九成碎备用,花椒,八角,搅碎成粉状备用.热锅将菜油用中火烧至中热(油开始流动时)转为小火即下花椒与八角粉炒出红油(大约八至十分钟),再依次将郫县豆辨,豆豉与干辣椒碎下锅炒勺后再熬大约十分钟,这时候下料酒后再多熬一个小时,下糖,酱油与味精调好味后再熬半个小时熄火,待冷却后即可装瓶.
