诱人甜品之中,始终还是偏爱意大利甜品,而Tiramisu恰如其名"pick me up"(physical and emotional)。
心想不如动手,取经加实践,homemade tiramisu, 交糅着illy espresso的浓郁,dry Marsala的醇香和Mascarpone cheese的细腻,的确life is beautiful。
在此,分享我的Tiramisu recipe
Ingredients
- illy espresso dark roast 10 oz
- 60 ml dry Marsala
- 6 large egg yolks
- 1 cup white sugar
- 11/2 cup heavy whipping cream
- 1 tsp vanilla extract
- 475g mascarpone cheese
- 200g lady fingers
- unsweetened cocoa powder
Prepare
- Make espresso about 10oz, add in dry Marsala 30ml, mix well and set aside to cool
- In a double boiler, combine 6 egg yolks, 1 cup sugar and 30 ml dry Marsala, while whisking constantly cook for about 10 minutes until the mixture turns pale, set aside and let cool. Once cool, add in room temperature mascarpone cheese. Mix well until smooth.
- Use stand or hand mixer, combine heavy cream and vanilla extract and mix until a stiff whipped cream is made.
- Then add whipped cream into cooled egg yolks and mascarpone cheese mixture, fold gently to incorporate.
Assemble
Dip the ladyfingers into espresso mixture, and line the bottom of a 9" x 9" baking dish with them. Spread half of the mascarpone cheese mixture on top, repeat another layer of socked ladyfingers and then spread reminder of mascarpone cheese mixture on top. Cover and refrigerate for at least 8 hours before serving.
