Put eggs in a pot of cold water, set it on the stove, and bring to the boil uncovered. As soon as you see bubbles, turn off heat, slap on lid, and leave 10 minutes. Drain the eggs and give them a shock under cold running water. Peel.
Halve the eggs and remove the yolks. Mash them with the mayonnaise and curry powder to taste. Season with salt and pepper, and a little chopped green onion. Stuff the whites with the yolk mixture and arrange on a serving platter. Sprinkle with paprika before serving.
