抹茶千层蛋糕

30g butter:90g 面粉 =  47.3g butter  :142g面粉

Ingredients (14 sheets)(あぶら不需要)

Fresh whipped cream 

(Jan 27,2022 new:1000ml HC, 73g 糖粉, 22g 抹茶粉, 150g **

  • 550ml heavy cream or heavy whipping cream 
  • 40g icing sugar 
  • 加抹茶粉( 不要少加,要比面皮略浅,否则cream感觉有点甜)12g
  • 300 : 45, 550 : 82.5 (下次试多些或试后面的lady M filling)

步骤:

1. 将牛奶和糖放在小锅里搅拌加热到温热

2. 在一个大碗里放入3个大蛋,搅匀,分三次倒入上述奶液,每次都到搅匀,之后倒入融化了的奶油,搅匀。

3. 使用筛子,分三次倒入面粉,搅匀,再将混合液过筛,盖好,放入冰箱冷藏一小时。

4. 拿出煎皮。最后一张大的要留够足够的面糊

5. 82g++,用搅拌器搅匀,加入550g heavy cream,低速打,有泡后逐渐加入40g糖粉,再过筛加入12g抹茶粉,之后打到stiff but not hard stiff

Crêpe Batter: (makes 21-22 crêpes; 20 crêpes needed for cake):
6 tbsp unsalted butter [85 g] 3 cups whole milk [710 mL] 6 eggs [300 g without shell] 1/3 cup granulated sugar [67 g] 1/2 tsp salt [2.85 g] 1.5 cups cake flour [170 g]
 
Green Tea / Matcha Pastry Cream:
8 egg yolks [160 g] 3/4 cup granulated sugar [150 g] 1/3 cup cornstarch [40 g] 1/2 tsp salt [2.85 g] 4 cups whole milk [946 mL] 4 tbsp unsalted butter [57 g] 2 tbsp vanilla extract [30 mL] 6 tbsp green tea powder, i.e. matcha [36 g]
 
Whipped Cream: 4 cups cold heavy cream [946 mL] 1/3 cup granulated sugar [67 g]
 
Topping: 1 tbsp green tea / matcha powder [6 g] A little extra butter needed for greasing pan
