上周末请了牧师一家人来晚餐。牧师是菲律宾华侨,十岁移民来美国,连他自己都很久没有吃到菲律宾菜了。他第一个反应就是照相而且马上传给在加州的妈妈看。
Sinigang (sour tamarind soup)
可以配很多不同的菜和肉。我选放虾仁和大芥菜。小声透露,我偷懒,用了一个tamarind soup spice pack。加上水,煮开放料就成了。
菲律宾式empanada
馅是碎牛肉,葡萄干,青豆,番茄,辣椒,鸡蛋。外壳用炸的。做的够专业吧?因为是专业的啦!这是我在附近菲律宾小店买的。我老公很喜欢很喜欢!
Pancit Bihon (虾仁炒米粉)

这个菜跟中式炒米粉差不多,只是注意要买“Excellent"牌子的米粉,有一点cornstarch混合在米粉里,口感跟一般的新竹米粉不太一样。原方子用的是鸡肉,我换成了猪肉。想偷懒的话,可以买超市已经切丝的萝卜和切丝的包菜。很容易的一道菜,特别受小朋友喜欢。推荐一下!
Adobo Chicken(醋烧鸡)

很牙米!就是醋的味道好重啊,掀盖子的时候,酸味扑鼻而来,差点把我熏背气。
3-4 LB鸡肉, 腿肉为佳, (猪肉也行)
1 杯-白醋, (米醋也行)
1 杯- 酱油, 1个-洋葱, 切碎,
4-5 粒- 大蒜, 切碎,
3-4 片- 月桂叶, bay leaves
1 大勺- 黑胡椒粒, 略捣碎,
红糖, 只加一小勺,稍微平衡一下酸度.
做法:
把所有的材料放一盆里泡一小时以上, 把鸡取出沥干, 放热油锅里两面煎金黄, 我把皮和油都去掉了, 倒入腌料, 一起中火焖烧一小时, 鸡块取出装盘, 大火收干汁, 再倒在鸡上. 配白米饭吃, 牙米!
Kare Kare(花生酱杂炖牛尾)
应该是我尝试过最exotic的菜式了。第一次买香蕉心,味道苦苦的。这道菜材料很多,步骤蛮麻烦的,可是最后的味道太奇怪,家人不太能接受。

Adobong Kangkong(空心菜)
Ingredients
1 bunch water spinach (kangkong), leaves separated and stalks chopped in 1 inch length
1/4 cup soy sauce
1/8 cup vinegar
1 head garlic, crushed and chopped
1/4 cup water
2 tablespoons cooking oil
Salt and pepper to taste
跟普通炒空心菜也差不多,比较特别的是用醋和酱油调味,大概跟国菜Adobo差不多吧。放一点点辣椒提味。
Halo Halo
牧师说,Halo Halo就是混合的意思。
又打了懒主意,买到罐装Halo Halo蜜汁杂豆。用我家超强马力的美善品打碎冰,浇到刨冰上就成了。
Cassava Cake(木薯糕)
我们家都喜欢吃糯米的点心,木薯糕的味道跟糯米做的年糕味道,口感都好像。木薯真的很神奇--黑粗坚硬的外表,里面是硬邦邦的木头一样的材质,可是经过打碎和烘烤,居然变得如此香甜软糯,不可思议!
Ingredients
Batter:
2 lbs fresh cassava, grated
1 can coconut milk
½ can evaporated milk
2 pieces raw egg
¼ cup butter, melted
6 tbsp cheese, grated
½ cup condensed milk
14 tbsp sugar
Topping:
1 can coconut milk
2 tbsp sugar
½ cup condensed milk
2 tbsp flour
2 tbsp cheese, grated
1 piece raw egg
Cooking Procedure
. Combine the grated cassava, butter, condensed milk, evaporated milk, cheese, sugar, and eggs in a mixing bowl and mix thoroughly
. Add the coconut milk in the mixing bowl where the mixed ingredients are. Mix again.
. Grease the baking tray then pour-in the batter (ingredients that has just been mixed)
. Pre -heat oven for 350 degrees Fahrenheit for 10 minutes then put-in the baking tray with batter and bake for 1 hour.Remove from the oven and set aside.
. Meanwhile prepare the batter by combining the sugar and flour and put-in the heated saucepan.
. Pour-in the condensed milk then mix thoroughly.
. Add the cheese while stirring constantly.
. Pour the coconut milk and stir constantly for 10 minutes
. Pour the topping over the Cassava Cake (baked batter) and spread evenly.
. Separate the yolk from the egg white of the remaining egg (we’ll be needing the egg white)
. Glaze the topping with the egg white (you may use a basting brush for this step)
. Broil the Cassava cake until color turns light brown.
. Garnish with grated cheese and serve. Share and enjoy!
吃饭的时候牧师告诉我们菲律宾正遭遇重大台风水灾,当时我们都还毫不知情。目前灾情严重,祈福菲律宾人民早日度过难关。
